COTI has set staking times, 30 days up to 360 days. If you pull the stake out early because the price increases and you want to sell then the penalty is small. Starts at around 2% and every day you are staked it drops in penalty percentage. You will earn more than the penalty and it is nothing to worry about.
VET is good but no dislike from me as there is no urgency yet to buy more. Waiting for the use cases to increase blockchain transactions first. I would wait on VET.
