The service charge model you mentioned from the Chinese restaurants is interesting. It's flat, transparent, no guilt trip when paying. Feels closer to what payment should look like. Is that becoming more common in Toronto?

More common in Toronto? Not really. The service charge model does happen in mostly Chinese restaurants.
You may get service charge fees if you have large groups at restaurants in Italian restaurants, Pakistani restaurants, Chinese restaurants and maybe some other ethnic food places in Toronto.
