His point being that businesses with large profit margins are perfect for competitors to take on, as there is usually plenty of ways to undercut their prices and still make a profit.

This is so true because they are easier to attack. I doubt there is even a 5% chance this will become an opportunity, but you have to try. I always look into things if the business model is that good and why we are continuously hunting.
