A Little Bit of History
Pepper pot soup is believed to have originated in Philadelphia in the 1700s. It was first made by immigrants, from the West Indies, who had recently arrived in the city. The original recipe called for tripe (the stomach lining of cows or sheep) as well as vegetables and herbs like carrots, onions, celery, turnips, parsley, thyme, bay leaves and peppercorns. The combination of ingredients gave the soup its name – pepper pot. Over time, the tripe was replaced with more accessible ingredients such as beef or pork ribs. Today, pepper pot soup can be made with a variety of different meats and vegetables depending on personal preference.
