It would be plantain and I would have it in varieties like:
- Fried plantain with egg sauce.
- Roasted plantain with vegetable sauce and grilled or oven-roasted chicken.
- Boiled plantain with green vegetable sauce.
- Plantain pancakes.
- Plantain and pepper soup made with lots of protein and veggies like carrot, celery, and bell peppers.
- Plantain porridge made with veggies and dried fish.
- Plantain fufu/amala and oha soup or egusi soup.
