This was a true delight. Any fan of Bram Stoker would congratulate you on getting the 'voice' right. You let us know immediately that we are in the late 19th century (reference to Freud). You describe Hr.Göttlieb deliciously. We know when the doctor tastes the blood that he has made a grave error.

One thing, though, confuses this reader: the event takes place in 1893, but the doctor writes

Hr. Göttlieb was my first unwitting victim since the Turk’s besieged Vienna in 1683

This seems to imply that the doctor was feeding on victims in the 17th century. This reader is not able to reconcile the dates.

Nonetheless, the story is told so very well. This detail is not enough to derail that narrative (great use of appearance). Thank you for sharing this with us. Have you supported two other authors with your comments? Thank you!
