Cooking Beans And Sweet Potato Porridge For Breakfast

If you keep up with posts frequently, it isn't hard to know that I love beans and eat it weekly. Cooked alone or with other foods, one way or another, beans finds it way to my breakfast menu. For breakfast this morning, I paired beans with sweet potato to make a delicious porridge meal. Its a very easy recipe like most beans dishes. Preparation and total cooking time is all under an hour.

Here's my recipe

INGREDIENTS

Beans (1 cup)
Potato (2)
Palm oil (2 cooking spoonful)
Ground crayfish (1 tsp)
Ground pepper (1 tsp)
Salt (1 tsp)
Seasoning (1 cube)
Onion (1 medium sized)

PROCEDURE

Cook beans with a pinch of salt until soft.

Cut potato into small slices and add to the cooked beans.

Add the palm oil, crayfish, pepper, salt and seasoning cube.

Lastly add the onion and stir. Leave to cook for 10 mins or until potato is soft as you desire.

I gotta have beans every day, but I'm fully Ital, so comes with the territory. But the look on my face when my friends take me to a restaurant and the only thing I can order is a salad.......
