Rainy days call for a nice bowl of spicy white wine clam soup and curry rubbed grilled chicken.

Prepared and cooked this for staff meal dinner tonight.

I actually wanted to do Spaghetti Vongole but the supplier brought us a different type of clams instead of white clams. They got us this local clams called 'lala' so I decided to use it anyway instead of returning it to them.

I started with sautéing some minced garlic and birds eye chili then added in the clams together with white wine and chicken stock. Just about 1 minute with the lid covered and the clams are done and ready to be served.

It was spicy and had a nice briny flavor paired with the flavors and aroma of the white wine, all the combinations were just perfect. It was extra satisfying as it was a rainy day.

Another dish I made was a quick and easy curry rubbed boneless chicken thighs. I simple gave them a rub with curry powder, minced garlic, oyster sauce, and my secret ingredient - mayonnaise.

You can replace it with oil or butter but since mayonnaise is made from oil, it works well with rubs as it coats and marinades the chicken very well.

We had everything with rice as usual to fill our hungry tummies.
