I loved reading your post, I took the tour with you!
I like that Fort El Pinar is very similar to some in my country, with that undeniable Spanish colonial touch, simple but very characteristic. With respect to the buildings, it may be that as here they maintain and "rebuild" them maintaining the essence of them, without altering them, here it happens like that, it is a way to keep them visually the same. I was very impressed by the Mc Donal's eidcio, in fact I think it is the most atypical mc Donal's I have ever seen hahahaha and the church not to mention, I have never seen anything like that before either.
