Sautéed Veggie using YUBA

I will be sharing a dish here.
I made a sauteed veggie using a YUBA. This is my meat alternative and there are other dishes I can make from this too.

Definitely guilt free. Easy to prepare and less time to cook. I recommend this to you all. A simple dish and yet deliciously healthy. You can let me know in the comment if you've tried it yourself.😋

IMG_20230927_043523.jpg YUBA This is a Tofu skin, beancurd skin, beancurd sheet, or beancurd robes is a food product made from soybeans. This has about Energy: 2,217 kJ (530 kcal) Calcium: 21% 210 mg Iron: 64% 8.3 mg Magnesium: 62% 220 mg Protein: 50.4 gIMG_20230927_031859.jpg After soaking the yuba in 5 to 10 minutes in a hot water. I make strips out of it and coat it with breading mix (should be vegetarian) and then fried.This served as my meat ingredients.
IMG_20230921_175957.jpg the veggies used here, it's kinda like pinakbet but this has only 3 veggies and this has no bagoong or anchovies in English. I like the squash and ampalaya the most in this dish.

These are the ingredients:
Yuba, squash , eggplant, ampalaya, 🧅🧄🍅, vegetable oil, seasonings and soy sauce,

-Saute the onion garlic and tomato.

-add the squash first and just enough water let it half cooked.

-add eggplant and ampalaya, seasoned with your best seasonings and spices, salt to taste and a little soy sauce.

-let it simmer till it's cooked. Best if it's not over cooked. 😬
