The Vegan Cheese and a Very Stubborn Dough

So I’ve been craving cheese like crazy, but vegan cheese in Nepal is either ridiculously expensive or tastes like sadness. Then, finally, after years of begging, my friend brought me nutritional yeast all the way from Indonesia. Considering how pricey it is here, I genuinely thanked the heaven for this blessing. I soaked cashews, blended them with cornstarch(because, again, tapioca starch was nowhere to be found ), lemon, salt, and onion powder, and somehow created actual cheese without any measurements. Like… real cheese vibes. I stared at the jar like, “Excuse me… did I just do that?!”

Before I even wrestled with the dough, I sauteed tofu, capsicum, onions, and carrots. The colors were so cute I felt like I was hosting my own cooking show. Then came the dough. Just wheat flour and water. No technique, no perfection. I tried to make it round, but the stubborn dough said, “No thanks,” so I let destiny decide the shape. Actually, let’s not blame the dough it’s just my natural talent. Hahaa!

I added homemade tomato sauce, spread my proudly made vegan cheese, threw on the toppings, and prayed. It came out looking pretty chaotic, but somehow adorable. Plot twist: my non-veg family actually loved it. Honestly, that’s the biggest achievement of one of my amazing cooking skills. Hahaa!

I legit stared at the jar like I’d discovered a secret superpower. This whole experience made me so happy. It reminded me that vegan cooking here doesn’t have to be perfect. It can be simple, cost-friendly (if your friends bring you needed ingredients from abroad), messy, funny, and still delicious. And honestly… this stubborn little pizza finally satisfied my long-awaited craving.
