Exquisite Date Cake with a Touch of Chocolate and Walnuts. / Exquisito Bizcocho De Dátiles, Con Un Toque De Chocolate Y Nueces.

Greetings dear vegan community, I hope you are having a weekend full of tranquility and peace. 🤗

A few days ago a great friend of my husband and me, knowing that I like dates and that I use them a lot, gave me two boxes, you can not imagine how happy I was because sometimes they tend to be very expensive and I have to use them wisely so they do not run out so quickly.

For some time I had saved a recipe for a cake that was sweetened with pure dates and I was waiting for the right time to do it, now that I have plenty of dates I can no longer find excuses to make this recipe that today I will share with you.





Besides this cake also has Chocolate that you can add, either grated, in small pieces or as you can think of, and we give it a special and crunchy touch with the nuts, really a delicacy, to accompany it with your coffee or your favorite drink.

Now without further ado I invite you to join me in preparing this delicious cake.

Ingredients:

  • 30 seedless dates.
  • 350 ml of Almond Milk or any other Vegetable Milk.
  • 85 Ml of Vegetable Oil.
  • 150 grams of all-purpose wheat flour.
  • 1 teaspoon of Sodium Bicarbonate.
  • 1 teaspoon of baking powder.
  • 1 teaspoon vanilla.
  • 35 Grams of Walnuts.
  • 40 grams of dark chocolate, I used a 60 percent cocoa chocolate.
  • 1 Mold with a capacity of one and a half liters.



Preparation Mode:

The first thing we will do is preheat our oven to 180 degrees.

Immediately we are going to put in a pot the Dates and the Vegetable Milk, we are going to put it to cook until it comes to a boil, then we take it off the stove and let it rest for 10 to 15 minutes.

When we notice that our dates have cooled down a little, we pour them into the blender with the milk and everything.

We also add the vegetable oil, we blend, in this blending process we have to have a little patience, we make pauses and blend, this can take about 5 minutes, we will get a thick cream.

Now we are going to put in a bowl the wheat flour which we are going to sift together with the baking soda and the baking powder.

Add 1/2 teaspoon of salt.

And add the thick cream of dates.

Mix very well with a pastry spatula, add the Vanilla.

Then add the Chocolate and mix gently.

Now we have the mixture ready, we pour it into our mold, mine is Silicone, but if yours is not, remember to flour it or use wax paper to make it easy to unmold it, we take care that our mixture is uniform.

And on the surface we put the walnuts, either chopped or whole.

Bake in the oven for approximately 30 minutes, remember that it will depend on your oven, but after 20 minutes in my kitchen the smell was already delicious.

We take it out when we have already put the stick in the oven and it comes out dry. Look at the photo and see how beautiful it is. 😍

Let it rest and once it is cold, remove it from the mold.

And now just to enjoy it, it was soft and with the crunchy texture of the nuts, and the best thing we did not have to use sugar, its sweetness is perfect. 😋

Saludos querida comunidad vegana, espero y estén pasando un fin de semana lleno de tranquilidad y paz. 🤗

Hace unos días un gran amigo de mi esposo y mío, sabiendo que me gustan los Dátiles y que suelo usarlos mucho, me regaló dos cajas, no se imaginan lo contenta que me puse porque a veces suelen ser muy costosos y tengo que usarlos sabiamente para que no se acaben tan rápido.

Desde hace tiempo había guardado una receta de un Bizcocho que se endulzaba con puro Dátiles y estaba esperando el momento oportuno para hacerlo, ahora que tengo Dátiles de sobra ya no encuentro excusas para hacer esta receta que hoy compartiré con ustedes.





Además que este Bizcocho también tiene Chocolate que se lo puedes añadir, ya sea rallado, en trocitos o como se te ocurra, y le damos un toque especial y crujiente con las Nueces, realmente toda una exquisitez, para que lo acompañes con tu cafecito o tu bebida preferida.

Ahora sin más preámbulos te invito a que me acompañes a preparar este delicioso Bizcocho.

Ingredientes:

  • 30 Datiles sin semilla.
  • 350 Ml de Leche de Almendras o cualquier otra Leche Vegetal.
  • 85 Ml de Aceite Vegetal.
  • 150 Gramos de Harina de Trigo todo uso.
  • 1 Cucharadita de Bicarbonato de Sodio.
  • 1 Cucharadita de Polvo para hornear.
  • 1 Cucharadita de Vainilla.
  • 35 Gramos de Nueces.
  • 40 Gramos aproximado de Chocolate Oscuro, usé uno de 60 por ciento Cacao.
  • 1 Molde capacidad de litro y medio.



Modo De Preparación:

Lo primero que haremos es precalentar nuestro horno a 180 grados.

Inmediatamente vamos a echar en una olla los Dátiles y la Leche Vegetal, eso lo vamos a poner a cocinar hasta que suelte su primer hervor, luego bajamos de la cocina y dejamos que repose por unos 10 a 15 minutos.

Cuando notemos que nuestros Dátiles han enfriado un poco lo vertemos en la licuadora con todo y la Leche.

Añadimos también el Aceite vegetal, licuamos, en este proceso de licuado tenemos que tener un poco de paciencia, hacemos pausas y licuamos, eso puede durar unos 5 minutos, nos va a quedar una crema gruesa.

Ahora vamos a echar en un recipiente la harina de Trigo la cual vamos a tamizar junto con el Bicarbonato y el Polvo para hornear.

Le agregamos 1/2 Cucharadita de Sal.

Y añadimos la crema gruesa de Dátiles.

Mezclamos muy bien con una espátula de repostería, añadimos la Vainilla.

Luego le agregamos el Chocolate mezclando suavemente.

Ahora ya tenemos lista la mezcla, la vertemos en nuestro molde, el mío es de Silicona, pero si el tuyo no lo es, recuerda enharinarlo o usar papel encerado para que te sea fácil desmoldarlo, cuidamos que nuestra mezcla quede uniforme.

Y en la superficie le ponemos las Nueces, ya sean troceadas o enteras.

Metemos al horno por aproximadamente 30 minutos, recuerda eso va a depender de tu horno, pero a los 20 minutos en mi cocina ya el olor era delicioso.

Sacamos cuando ya hemos metido la varilla y esta sale seca. Mira la foto ha si de hermoso nos ha quedado. 😍

Dejamos reposar y una vez frío lo desmoldamos.

Y ahora solo a disfrutarlo, quedo suave y con la textura crujiente de las nueces, y lo mejor no tuvimos que usar Azúcar, su dulzor es perfecto. 😋
