Recipe of cachapas without Corn |

Cooks from all over the world, we are used to making Cachapas with corn, obviously it is the main recipe but we have other alternatives and one of them is with a delicious pumpkin. How is it possible? The truth is that yes, it is possible and with a unique flavor, when preparing it you will find that its layer of flavor, like the traditional one, is almost intact.

- Pumpkin. The quantity will be available for as many people at home as want to make them, in my case I'm only going to eat them, so with a small piece, 1/4 will be fine. - Salt. A pinch of salt. - Chia. This recipe incorporates chia, because it is very nutritious and gives it a more original touch. - Optional (Flour of preference), it can be 1/4 cup of corn, or what is allowed. In my case, I will use flour processed by my green plantain. It is very easy to prepare, later I will share how it is processed and in this way they will be given to you in multiple recipes. If you want, do not add any flour and its pure flavor remains, yes, they must make the mixture very thick. - Water, if necessary, to make more mix and/or if you add some type of allowed flour, which requires water, not much because the pumpkin detaches.

The first thing we will do is chop the auyama, which is our star ingredient in this recipe for Cachapas without corn. Because the flavor and its contribution will be given by the pumpkin.
Chop the pumpkin into squares or as you prefer and boil until they speak.
Once boiled, let it rest for a few minutes and put it in a blender.
When preparing, we add salt, and if it is the case, preferably some type of allowed or simply natural flour.
Once passed through the mixer, we pour the mixture into a container and add the chia, to the taste of each one. 1 1/2 teaspoon would be fine.
Turn on the heat, place the pan and add, when it is hot add it and let it cook over medium-low heat and in this way we will be aware that it does not burn and that it is done on both sides.

Note: if you want to prepare the green plantain flour at home, use a dehydrator for approximately 1 hour when it is crunchy, process a little, sift and that's it... I hope you like it. Soon I would like to share the process as well, or grains that are used to make flour.
