The Legendary Mud Cake Wet Cake / Plant-based Cooking Challenge, Weekend #29.

Mud cake is a food that is processed with natural ingredients in the form of fruits and vegetables, this cake which is usually served for snacks or celebrations has a very soft texture. Mud cakes do not last long, this is because they are classified as wet cakes.

The process of making it is also not difficult, this cake is a traditional cake that has been around for a long time, therefore it is very easy to find mud cakes in several countries in Asia. On this occasion I will cook Mud Cake, this food I serve as an afternoon snack for my beloved family at home, as well as to take part in the #plantbased cooking challenge every week by @justinparke.

Materials used:
Potatoes 300 grams.
Coconut (Santan Kelapa) 300 milliliters.
Sugar 175 grams.
Vanilla 2 tablespoons.
Wheat Flour 175 grams.
2 eggs.
Margarine 100 grams.
Raisins to taste.
Enough water.

Manufacturing steps:
First, process the coconut by using water to make enough coconut milk.

After that, peel the potatoes and cut or slice them into several parts, then wash them thoroughly.

Next, boil the coconut milk until cooked, stir until evenly distributed and use medium heat when boiling it.

After that boil the potatoes until cooked, once cooked drain and place in a storage container for a while. Next puree the potato using a blender, if it has been mashed then place it back into the storage container for a while.

The next step is to put two eggs into a blender to be mashed then add 175 grams of sugar, puree the two ingredients until really smooth. Next, enter the coconut milk and flour, then put the mashed potatoes back into the blender, add the vanilla and the margarine that has been provided previously. Blend all these ingredients until completely smooth until the process is complete.

When finished, pour the cake batter into the storage area, then prepare kitchen tools to bake it. After that pour the cake batter into the mold or baking tool (in this process I bake it with an electronic toaster). Bake the dough until half cooked, if it is half cooked then put the raisins on top of the cake that is being baked, then continue the process again until it's finished.

To find out if the cake is cooked or not, you can see on the top of the cake, if the cake is no longer moist then the cake is cooked and can be served to enjoy. That's how to cook Mud cakes which have a sweet, savory and delicious taste when enjoyed, this food is usually often served when there are various traditional events or celebration events and others.

A very interesting concept to use white potatoes in a cake...I am intrigued and will have to try it, minus the eggs as I am a vegan.
