A Simple Vegan Breakfast.

Compliments of the season to every member of this great blockchain, and I welcome you all to my blog. It's a new week, and one of the ways to start is taking something healthy to keep us strong and active for the day.

For breakfast today, I made a very simple recipe known as plantain and veggies, but despite the simplicity of this recipe, it ticked so many boxes for me. It is very simple to prepare; it is healthy, very cheap to prepare, and it doesn't take much time to prepare.

This recipe is one of my very quick meals, and doing one thing differently just made me feel more in love with it.

Let's get to the preparation.

Ingredients.

  • 4 pieces of plantain
  • 3 pieces of carrot
  • 3 Spring onion
  • 1 piece ginger
  • 1 Bell pepper
  • 2 small onion
  • 5 pieces of green pea
  • 1 teaspoon of salt
  • 40ml Groundnut oil
  • 15g of chilli powder

Preparation.

I started by washing the plantain in clean water.

I chopped off the head and tail of the plantain before gently arranging them in a clean pot.

I added half a teaspoon of salt and poured in enough water to cook the plantain.

I turned on the heat of the cooker and started cooking the plantain.

While the plantain was cooking, I went on to process my veggies.

I chopped the carrot, bell pepper, onion, spring onion and green pea into smaller sizes.

I grated the ginger as well and kept everything aside.

By the time I finished processing these recipes, the plantains had cooked, so I turned them into a sieve to cool off.


I added a small quantity of groundnut oil to my frying pan and allowed it to heat for a few minutes under low heat.

I turned the carrot and onions into the hot oil and stirred to prevent them from getting burned since I am not using much oil.

The green pea, ginger, bell pepper, and ⅓ teaspoon of salt joined the party.

I stirred again and still continued frying them under low heat.

The chili powder came in, and we are almost done; just don't stop stirring like I did.

I added the spring onion in the end.

I only fried for a few minutes after, and the veggies are ready.


I removed the back of the boiled plantain and placed them gently on a clean plate.

I made an opening on top of the plantain.

The pieces I removed from the plantain were cut into smaller sizes and added to veggies. I fried everything again for a few minutes before turning of the heat.

I filled the space with the veggies, and as you can see, it's time to eat.

You can serve this simple recipe with your tea, juice, and even coffee in the morning.

I have just eaten a banana, but seeing this, I think that tomorrow, I should buy some plantain (I think it's called "platano" in Spanish) and try your recipe! It looks great and I bet it's delicious!

I am glad you are giving this a try tomorrow and you are about to have another favorite recipe. It's the plantain season here so we have them around more than usual, I include it in almost all my meals because I love plantain a lot.
