Creamy Mexican soup with potato tortilla to warm your heart

Lately, Sundays have become my favorite day of the week. I wake up early, go to the market, and since I have made friends with the vendors, I always have a good laugh while filling my bags with fruits, vegetables, and greens.

Sunday is also yoga day, and it is the day I get on my bike and ride around aimlessly. Last Sunday, however, I was caught in a tropical storm. When I got home I was soaked and freezing to death.

I thought that after a heavy rainstorm, soup would be nice. But I didn't want to have a boring soup, you know? I wanted something that would nourish the soul and cheer me up as well. So I thought of something a little Mexican and this amazing soup came out.

Let's get to the kitchen. Shall we?

Ingredients (2 people)

This soup is full of flavors and has a warm texture! It's creamy and spice! Perfect for days where you're feeling sad, low or just need to get warm!

To make this creamy Mexican soup, we will need:

1 red bell pepper
1/2 red onion
3 heads of garlic
1 carrot
2 medium sweet potatoes
1 tablespoon hot paprika
1 tablespoon cayenne pepper
chopped cilantro
salt

For the "salsa" sauce we will need

2 tomatoes
½ red onion
chopped cilantro
juice of 1 lemon
salt to taste

For the tortillas, we will need

1 large boiled potato
2 cups of oatmeal
3 sprigs of spring onion, chopped
1 tablespoon turmeric powder
1 tablespoon onion powder
salt to taste

Directions

Let's start by preparing the soup. Since it will need to stay on the heat for a while to refine the flavors, we use this cooking time to make the sauce and tortillas.

Making this Mexican soup is really easy. First, you start by chopping the ingredients. Since we are going to blend the soup in the blender afterward, you don't have to worry about chopping the vegetables too small. Chop them coarsely and you'll be fine!

Start by sautéing the onion and garlic. Next add the bell pepper, carrot, potatoes, and seasoning powder. Saute well until the vegetables are a little soft. Then cover with water and add some chopped cilantro. Close the pot and let the vegetables cook well. You will know that the soup is ready by the aroma. This soup is super fragrant and will make your whole house smell delicious.

Then cover with water and add some chopped cilantro. Close the pot and let the vegetables cook well.

Now it's time to make it creamy!

While the soup is cooking, let's prepare the sauce that will be served with it. Chop the tomatoes, the onion, and the parsley into small pieces. Put everything together in a pot and add the juice of ½ lemon. Season with salt and pepper to taste. Also, add a tablespoon of olive oil. Just mix it all together and the sauce is ready!

Finally, it's time to make the tortillas. Start by cooking the potatoes and removing all the peel. As soon as they are soft, mash them all in a bowl. Add scallions (cilantro is also delicious), salt, a tablespoon of turmeric, and a tablespoon of onion powder. Mix well and add the oat flour little by little until the dough is smooth.

There you go, now divide it into 4 small balls and separate them. To prepare the tortillas, heat an anti-adherent frying pan. On a piece of baking paper, place the small balls and open them until they are very thin. Place them in a very hot frying pan and brown them on both sides. Done! It's ready!

Now it's time to serve the soup. Blend the vegetables until you get the consistency of a thick cream. Then serve with the sauce and the potato tortillas.

This soup is deliciously creamy and super comforting! Because it is slightly spicy, it also gives a lift to the mood! It's worth a try!
