Today, I’m sharing Thalipeet, a special Maharashtrian breakfast or snack that is quite popular in Maharashtra, Telangana, and Karnataka these three states in India. Growing up in Karnataka, I always enjoyed this recipe as a breakfast option or snack. Back then, there were no cakes, instant noodles, or packaged snacks in our small village; we relied on whatever my mother would make for us based on the availability of ingredients.

My mother was very clever and always found ways to keep us happy and healthy. Unfortunately, she passed away at a young age, leaving us with only memories of her.

Thalipeet was an easy snack that required no elaborate preparation or expensive ingredients; whatever we found at home would work. My mother would make a special flour from roasted multi-grains, and whenever we asked for a snack, she would use that flour to create delicious food. We never really felt the need to ask for any market-bought snacks.
This recipe I learned from my school time after mother passed away we would carry on our life and learned some from remembering mother's recipes and some from my neighbors.
Thalipeet is so easy to make only need practice for make this flatbread on a hot pan using hand palm.
in the beginning, I burnt my fingers often, but after a few months, I learned that and never had problems.
Ingredients:

1 cup rice flour
1 cup pearl millet /Jwari flour
1 chopped onion (I used white) or any kind of onion
1 chopped tomato
1 green chili.
2 tbsp chopped fresh coriander
1/4 tsp turmeric
1/2 tsp salt
1/4 tsp cumin seeds
2-3 tsp coconut oil for grease in a pan.
1 tsp sugar you can avoid sugar and add your favorite vegetables.

Mix all ingredients in the bowl.

Gradually pour water into the mixture.

make nice soft dough.

Pour and spread 1/2 tsp coconut oil in a pan.

Take an appropriate amount of dough.

Press the dough and flatten it in the pan using your fingers.

Make it as thin as possible to ensure proper cooking and achieve a crispy texture.

cook it until it changes color(a little translucent)

flip it and cook the other side. Sprinkle a few drops of oil on it.

cook for another 2-3 minutes.

Remove from pan and repeat the same procedure to make more from these ingredients 4 medium-sized Thalipeets will done.
that is enough for two adult's breakfast.

Eat them when they are warm to feel that nice crunchy taste.
