Steamed vegan protein chunks/cubes and wadas

Hello, friends, vegan lovers, and community greetings! I hope you all are doing well and having quality time with your lovely families.
last week we had festive days and used lots of vegetables and lentils, eating the regular way, very similar things each day, so I wanted to make some changes. I made these protein chunks and wadas to use them in different recipes and saved some in the freezer to make a new creation. They can be used in many different ways: just shallow fry and eat as a snack, put them in a sauce or soup, cook them in vegetables, or use them like falafel in kati rolls
Marinate and grill them or make curry.

Ingredients:

5 different split lentils: yellow, red, moong, chickpeas, and urad, around 3 tbsp each
5-6 florets of broccoli
2 carrots
2 siveri the Turkish green paprika
4-5 medium-sized cabbage leaves
1 small onion
1 green chili
4 cm fresh ginger
2 tbsp chopped coriander

Spices:
2 tsp coriander powder
1 tsp garam masala
1/2 tsp turmeric
1.5 tsp salt
1 tsp Kashmiri chili powder
2 pinches of hing asafoetida.

What flour do you find in your grocery cabinet? Just take it according to your taste choice and availability, 1/4 cup each
I took
1 cup of gram flour
1/4 semolina
1/4 cup rice flour
1/4 cup wheat flour
1/4 cup corn starch

Mixed all the dals/split lentils.
washed them thoroughly
Soaked them for around 4 hours
discarded water

Ground them using a mixer into a coarse texture.
then mixed chopped coriander in with it.

Washed and chopped all the vegetables. I used a mini chopper to get a fine texture.

Here I had all the ingredients I used in this recipe.

In a mixing bowl, first I put ground lentils/split lentils,
Then chopped vegetables
Mixed them thoroughly
Added spices

Mixing the lentils and vegetables, gradually added flour and made a nice, moist dough. I didn't add water, the water from all the vegetables was enough for the dough. If you want it more airy, use a few drops of lemon juice with a pinch of baking soda.

I prepared a steamer using a saucepan and a stainless steel strainer, placed baking paper greased with oil.
Taking an appropriate amount of dough made the wadas like doughnuts ( make a ball from the dough, press it, and make a hole in the middle using a finger). Some I made just small lumps, to fit in the empty place on the strainer.
Placed one by one on the strainer.

Covered the saucepan and steamed wadas for around 10 minutes over medium heat.Did this process 2 times.

Made around 10-12 big and 8 small, but still some dough was left. I placed it in the cake pan, covered it, and steamed that also.
after 20 minutes checked with a knife the clear blade test.
and removed from the steam.

After it cooled, I cut them into small squares and placed them in a container, which I stored in the freezer. If stored in appropriate portions, they can last for up to a month, and may even remain good for longer than a month. I make mostly fresh, so I haven't tried a long-term.

The same day, I made mushroom cream with these wadas, and

You can eat them like a snack after shallow-frying or air-frying(I don't have an air-fryer, make your own experiment) with ketchup.

One day, I shallow-fry a few doughnut-shaped pieces to serve in a thali.
