meatless monday dinner from garden harvest.

Hello, vegan lovers greetings🙏. This Monday we made some easy dinner by harvesting some vegetables from the garden.
Our harvest is quite late but it coming through slowly.
we have cherry tomatoes, green beans, some herbs, potatoes, and kale, Rocket is growing wild. lots of calendulas, Even sometimes getting champignon mushrooms also. I was thinking about making some photos for the garden hive community and started collecting small herbs like oregano, thyme, marjoram, and chives to clean and dry. and then found there are nicely ripe cherry tomatoes and some green beans which started very late. but they coming along. saw some potatoes want to jump out from the soil, I collected a few of them. while walking from the garden to a house on the way saw the champignon very fresh and drooling by seen it.
with some garden harvest and a few things from the pantry, and fridge I made this dinner for us. very simple perfect for a summer evening.

my harvesting.

Things from the garden:
Cherry tomatoes
potatoes
green beans
cucumber I got from a neighbor
calendula flowers. They taste very good.
Marjoram
rocket
calendula leaves
champignon


Steamed asparagus
parsley from garden
Rock salt
mustard paste
1 tbsp pumpkin seeds
1/2 tsp black pepper
1/2 cup green peas harvest from the garden
1/2 cup pomegranate
10-12 slices of coconut
2 tbsp olive oil
half lemon juice
1 clove of garlic
1 small onion
1/2 cup khuskhus
1/2 paprika left over from fridge.

Clean and chopped all vegetables clean and cut mushroom in the pieces.

Heat oil in a pan and add chopped garlic onion and red paprika in .stir until getting softer. Add chopped potatoes and stir until get transparent. Add grounded salt and pepper

Add chopped beans and green peas into it and stir for 3-4 minutes. Add water to cook all vegetables.
Now add the khuskhus stir it, cover the pan and close the heat. and after 3-4 minutes it is ready.

Add steamed tender asparagus into cooked khuskhus.

Cut a cucumber into slices, and chop red paprika in the slices. chop herbs.

Mix all vegetable tomatoes, rocket, pomegranate kernels, green beans, paprika slices calendula leaves, and pumpkin seeds.


Mix all vegetables and make a dressing with lemon juice, salt pepper, sugar, and olive oil mix this dressing in the salad. added the rest of the ingredients mustard flowers, calendula flowers, and marjoram flowers, and give a nice mix.

In a frying pan I fried mushroom it was one but soo delicious aroma, I used little more oil to fry it so I can use that oil on the top of my dinner plate

I displayed my dinner plate first vegetables mixed khuskhus.

and on the top the used all vegetables with dressing and top I had that one mushroom and aromatic oil.
