Hello, food lovers greetingsš. I am enjoying this nice and lovely community with nice people. thank you @plantpowerhive, @sirenahippie, and @riverflow inspiring people's interest in vegan food. Today I made some steamed cucumber muffins for our breakfast. It is very healthy, tasty, and easy to make as a warm breakfast.
Steamed cucumber muffins with different toppings, mango pulp, maple syrup, coconut cream, cashews, raisins, and freshly grated coconut.
Ingredients:
1 cup coarse semolina
3/4 cup of coconut cream thick 1/4cup + 1/2 cup thin.
2 tsp coconut oil
7-8 whole cashew after I washed and chopped it
1/3 cup fresh coconut grated I have always in my freezer.
25 raisins
3 cardamoms
1/3 cup sugar cane jaggery
2 cucumber for a normal recipe but I had only one that I used.
pinch of salt
Semolina is high in carbs but vit b6,b2, iron, and folic acid, fibers are good for those who like to lose weight because semolina increase the feeling of fullness and reduces the hungriness.
Jaggery is made from sugarcane juice or coconut sap. In Indian cuisine use of jaggery is very common. It has health benefits containing iron increased hemoglobin, supports the immune system, and helping to the liver and digestive system we use jaggery in our traditional medicine Ayurveda for the preparations of some herbal medicine.
Cucumber has vit c and vit k more potassium so using cucumbers more in summer helps balance the body hydration, prevents sunstroke, balances blood sugar, it is a good heart tonic, and is good to include in weight loss programs for obese.
coconut the oil, the milk, and fresh meat are all like miracle food we Indians called it desired food and the coconut tree is yielding tree even. In the temples, we get the prasad of fresh coconut chunks. we south Indians use lots of coconut or coconut oil every day. It contains good fat, proteins, and many essential minerals like copper, iron, selenium, and Vit D. It is low in carbs and rich in antioxidants and healthy fibers. It supports the control of blood sugar, is good for memory, is anti-bacterial, and anti-fungal, sharpens brain activities, is anti-inflammatory, and uses for hair and skin health. it is an antidiabetic agent.
Raisins play a very important role for vegan people because of containing soluble and insoluble dietary factors with probiotics that support the growth of good bacteria in the intestine. it improves the metabolism, lowers the bad cholesterol good for constipation, and is a quick energy provider.
The cashew healthy plant protein. rich in fiber, copper zink, magnesium, selenium, vit k, B6, iron, good for heart health, immunity, and bone health, in Indian cuisine we often have cashews and raisins. If not in cooking then at least we eat some cashew nuts and raisins as a snack.
cardamom is a good stimulant for digestion, good for insomnia, a good mouth freshener, an immune system supporter, and good for the respiratory system.
I have a good medical background and experience in food and nutrition.
Heat coconut oil in the pan and roast semolina gradually without getting burnt. when started aromatic take off from the heat and set aside to cool.
prepare the other ingredients: grate the cucumber, chopped cashew, cut jaggery into small pieces, and grind the cardamom.
Now mix semolina, fresh coconut, and jaggery ( I used a little less than I wrote in the ingredients), cardamom powder, salt, cashew, raisins, and baking powder. add coconut cream 1/4 cup thick part and 1/2 cup thin part to make a thick batter.
After mixing the batter oil the small muffin cups with coconut oil
fill the cups with batter. and set them on the steamer plate.
Boil water in the pan and set one wire stand in it now place the steamer plate in the pan and close with lid cook it for around 8-10 minutes check it with a toothpick if clear then it is done. use any topping like jams, fruits, nuts, or coconut cream, I used mango pulp, fresh coconut, coconut cream, raisins, and cashew on the topping.
