Pasta isnβt just meant for Western cuisine β it can be transformed into a delicious and nutritious dish that perfectly suits any Sri Lankan meal. By combining it with colorful vegetables like carrots and leeks, this recipe creates the perfect balance of flavor, texture, and nutrition. The mild sweetness of the vegetables blends beautifully with the spices and creamy sauce, resulting in a comforting and satisfying dish.
So, let me show you how I turned this pasta into a flavorful curry version that youβll definitely enjoy.
Required Ingredients...
π pasta 100g.
π A carrot.
π A few leaves of leeks.
π Curry leaves.
π 3 dry chili pods.
π 3 green chili pods.
π 3 cloves garlic.
π 1 onion.
π 2 tablespoon of coconut oil.
π 1 Cup of coconut milk.
π 1/2 Teaspoon of turmeric powder.
π 1 teaspoon chili powder.
π 1/2 teaspoon curry powder.
π 1/2 Teaspoon of fenugreek seed.
π Salt as needed.
Method of making....
First, boil the pasta well until it becomes soft and perfectly cooked.
Next, finely chop the carrots, leeks, onions, green chilies, and garlic.
Next, place a cooking pan on the stove and add two tablespoons of coconut oil. Once the oil is heated, add the chopped onions, garlic, curry leaves, fenugreek seeds, pandan leaves, and pieces of dried red chili, and sautΓ© them lightly until fragrant.
Next, add the chopped green chilies, carrots, turmeric powder, chili powder, curry powder, and salt to the pan. Mix everything well so that the spices coat the vegetables evenly and release their aroma.
Now, add about half a cup of coconut milk and cook the carrots until they become tender.
Next, add the boiled pasta, leeks, and the remaining half cup of coconut milk to the mixture. Cook for about 3 minutes, then remove it from the heat.
