Good morning, hive friends! How are you all doing today? I'm excited to share a delicious dish with you: Eggplant Moju, also known as eggplant pickles. This delightful Sri Lankan specialty strikes a perfect balance between savory, sweet, and spicy flavors, making it a versatile and flavorful addition to any meal. It pairs wonderfully with rice, bread, or can even be enjoyed on its own as a tasty snack.
What makes eggplant moju even more appealing is its nutritional value. The main ingredient, eggplant, is rich in vitamins and minerals, offering numerous health benefits. Garlic, another key component of this dish, is known for its immune-boosting properties. Additionally, vinegar, a crucial ingredient in the pickling process, aids in digestion and helps regulate blood sugar levels.

Required Ingredients...
🍀 Eggplant 500g
🍀 Vinegar.
🍀 Tomato sauce.
🍀 1 teaspoons of crushed chili powder.
🍀 1 teaspoons of chili powder.
🍀 Salt powder as needed.
🍀 1 teaspoon of Mustard powder.
🍀 Curry leaves.
🍀 Green pepper 50g.
🍀 A few sticks of cinnamon.
🍀 About 5 cloves.
🍀 A little crushed garlic.
🍀 A little crushed ginger.
🍀 Coconut oil for frying.
🍀 About 20 small onions or chopped onions.
Method of making.
First, wash and clean the eggplants and cut them into small pieces.
Then add turmeric powder to the cut eggplant pieces. Mix it well.
Then take a bowl and add coconut oil to it and put it on the stove. After the oil heats up, fry the eggplant pieces until they turn golden.
Then take some onions and green chillies and fry them quickly and remove them from the stove.
Then take about 3 tablespoons of vinegar and add a spoonful of mustard powder to it and mix it.
Then take a clay pot and add 2 tablespoons of coconut oil to it and keep it on the stove. After the oil is heated, add crushed garlic, ginger, cloves, cinnamon and curry leaves to it and mix well.
Then add chili powder and vinegar mixture to it.
Then add 4 tablespoons of tomato sauce, fried onions, green chillies and eggplant pieces to it and mix it and remove it from the stove in two minutes.
