Herb and Garlic Jalapeño rolls

There’s something so comforting and satisfying about making your own bread. It feels like an achievement, which is really weird because bread is usually inexpensive to buy and generally freely available. There’s also nothing quite like the aroma of bread baking; perhaps that’s one of the motivators. I’m not really sure what it is about homemade bread and rolls, but baking bread is in my “bones” and it just pleases my soul.

Many people feel daunted at the very thought of making bread, but this recipe really works fabulously well and the result is a batch of fancy rolls that you can serve with a bowl of soup or use to whip up a quick lunch or brunch— they’re great with slices of cucumber 🥒or tomato 🍅(nothing else is necessary because they’re full of savoury goodness already)

I’ve used thyme, rosemary, garlic, chilli and pickled jalapeños because I adore chili, but you can use any combination of herbs and extras to make fun rolls that suit your taste—think olives, sundried tomatoes, capers or peppadew. For instance a good combination would be oregano, olive oil (instead of plain vegetable oil) and olives. The recipe is very versatile.

Ingredients

Makes 24 rolls

  • 3 ½ cups of flour (bread flour works best)
  • 3 tablespoons of vegetable oil
  • 3 tablespoons of brown sugar
  • ½ teaspoon salt
  • 1 teaspoon chilli powder
  • 1 teaspoon garlic powder
  • 1 heaped teaspoon dried thyme
  • 6 sprigs of fresh rosemary
  • 3 cloves of garlic
  • 2 pickled jalapeños
  • 1 packet of instant yeast
  • 1 teaspoon baking powder
  • 1 ½ cups of warm water
  • Extra oil and flour for processing

Method

In a large bowl, mix sugar and warm water. Stir to combine. Sprinkle the yeast over the mixture and add 3 tablespoons of oil. Mix gently.

Leave the mixture to froth, about 7 minutes.

Strip the Rosemary off the stalk and dice.

When the yeast has activated, add the flour to the bowl. Do not blend in. On top of the flour add the salt, chilli powder, garlic powder, thyme, fresh rosemary and the baking powder. Blend the herbs and spices into the flour gently. (Salt can deactivate yeast, so make sure to blend it into the flour so that it doesn’t touch the yeast directly)

Using a fork to blend the flour mixture into the yeast mixture. Once it’s combined, use oiled hands to form the dough. The dough is the right consistency if the sides of the bowl are clean and the dough does not stick to the sides. (If not add water or flour, 1 tablespoon at a time)

Knead the dough in the bowl for 5-7 minutes until it feels “elastic”.
Oil the dough with about 1 ½ tablespoons of oil. Cover with a clean dish towel and put into a warm place to rise (a cupboard is a good choice). Leave it to rise for 30 minutes.

While the dough is rising, prepare the garlic, jalapeños. Dice the garlic finely. Dice the jalapeños roughly (not too small)
When the dough has doubled in size, divide into 3. Wrap 2 in foil and freeze. Divide the balance into eight pieces.

On a flour dusted surface, flatten a piece of dough, sprinkle it with jalapeño and garlic, lightly. Fold the dough over the mixture. Roll into a ball to combine. Then roll the dough into a sausage shape about 15-20 cm long. Fold in half and plait the dough into a pleasing shape. Roll all eight pieces in the same way.

Place the rolls onto a greased baking sheet. Brush the top of each roll with vegetable oil. Place the baking tray into the oven to rise (do not switch the oven on). Allow to rise for 45 minutes. Switch the oven on and bake at 180 degrees Celsius for 12-15 minutes.

I stopped because I did so when I lived in the Philippines, and I had brought in special bread-making mixtures from the UK. Here the variety is so easily accessible that it's simpler to just buy the bread that I want. With your idea now, I feel some motivation:)
