A loving greeting to all my friends of Hive, again I am pleased to be with you in this beautiful community Plant Power (Vegan) where you learn so much about good eating and good living. This day I bring you a recipe that I love, it is a very delicious chickpea stew, ideal to accompany with rice or bread. Chickpeas are a delicious and nutrient-rich legume, with a long history and a very important cultural memory. Besides being a powerful source of vegetable protein, it also provides a good portion of carbohydrates, as well as fiber and minerals such as phosphorus, magnesium, potassium and sodium.

This is a dish that I have been eating since my childhood and this way of preparation is also a family heritage. Below I will share with you the step by step and the ingredients for 4 generous servings.

Ingredients

  • 1/2 cup of chickpeas
  • 1 medium carrot
  • 1 medium bell pepper
  • 1 large onion
  • 1 potato
  • 1 clove of garlic
  • 2 sweet peppers
  • 80 grams of green onion
  • 3 bay leaves
  • ¼ teaspoon cumin
  • ¼ teaspoon paprika
  • ¼ teaspoon black pepper
  • Salt
  • Oil

This recipe starts the night before, when we put the chickpeas in water to hydrate overnight. At the moment of starting the recipe, the chickpeas should have been hydrated for at least 8 hours.

The first thing we will do is to clean and chop the vegetables in small squares, the onion, the sweet bell pepper, the bell pepper, the garlic clove, the potato and the carrot. We will put the potato in a little water so that it does not oxidize.

We will look for the pot where we are going to cook, the chickpea can be very delicious if we cook it over low heat, but we do not always have the time so I usually cook it in a pressure cooker. In my case I will use the electric pot, first we will put a splash of oil, then we will pour in it all the vegetables except the potato and then we will incorporate one by one the spices and we will fry it.

When the vegetables are sautéed, add the potato and stir with a spoon to integrate it, put it last so that the starch does not interfere in the sautéing process. Then add the chickpeas and mix them with the sauce, immediately add about 600 ml of water, close the pot and let it cook for about 45 minutes.

When this time passes our stew will be ready to eat, without a doubt it is a delicious dish, the color is wonderful, as well as the smell and the flavor. Delicioso Guiso de garbanzos (Ingles/Español)

Un saludo amoroso para todos mis amigos de Hive, nuevamente me complace estar con ustedes en esta preciosa comunidad Plant Power (Vegan) donde se aprende tanto del buen comer y el buen vivir. Este día les traigo una receta que adoro, se trata de un guiso de garbanzos muy delicioso, ideal para acompañar con arroz o pan. El garbanzo es una leguminosa deliciosa y rica en nutrientes, tiene una larga historia y una memoria cultural muy importante. Además de ser una poderosa fuente de proteína vegetal, también aporta una buena parte de hidratos de carbono, así como fibra y minerales tales como el fosforo, magnesio, potasio y sodio.

Este es un platillo que como desde mi infancia y esta forma de preparación también es una herencia familiar. A continuación compartiré con ustedes el paso a paso y los ingredientes para 4 porciones generosas.

Ingredientes

• 1/2 taza de garbanzos
• 1 zanahoria mediana
• 1 pimentón mediano
• 1 cebolla cabezona
• 1 papa
• 1 diente de ajo
• 2 ají dulces
• 80 gr de cebolla en rama
• 3 hojas de laurel
• ¼ de cuchara de comino
• ¼ de cuchara paprika
• ¼ de cuchara de pimienta negra
• Sal
• Aceite

Esta receta comienza desde la noche anterior, cuando pondremos los garbanzos en agua para que se hidraten durante toda la noche. Al momento de comenzar la receta estos ya deberán tener mínimo 8 horas de hidratación.

Lo primero que haremos será limpiar y picar los vegetales en cuadros pequeños, la cebolla en rama y la cabezona, el ají dulce, el pimiento, en diente de ajo, la papa y la zanahoria. La papa la pondremos en un poco de agua para que no se oxide.

Buscaremos la olla donde vamos a cocinar, el garbanzo puede ser muy delicioso si lo cocinamos a fuego lento, pero no siempre tenemos el tiempo así que por lo general lo cocino en olla de presión. En mi caso utilizare la olla eléctrica, primero pondremos un chorro de aceite, luego verteremos en ella todos los vegetales menos la papa y enseguida incorporaremos una a una las especias y nos disponemos a sofreír.

Cuando ya esté sofritos los vegetales, incorporaremos la papa y revolveremos con una cuchara para integrarla, la ponemos de último para que el almidón no interfiera en el proceso de sofreír. Enseguida verteremos los garbanzos y los mezclaremos con el sofrito, de inmediato agregaremos unos 600 ml de agua, cerraremos la olla y dejaremos cocinar por unos 45 minutos.

Cuando pase este tiempo nuestro guiso estará listo para comer, sin duda es un plato delicioso, el color es maravilloso, así como el olor y el sabor. Podemos ajustarle la sal e incluso ponerle un poco de picante, todo depende del gusto.
