Quiero compartir con ustedes como preparar unas deliciosas berenjenas veganas, rellenas con cebolla, pimentón, ajo y rociada con harina de avena.

- 3 berenjenas.

preparación de las berenjenas rellenas:
- Lavar las berenjenas con agua, picarlas por la mitad, en una olla con agua ponerlas en la candela para sancochar.

- Picar la cebolla y el pimentón en trozos pequeños.
- Pelar y triturar el ajo.
- Agregar en un sartén con un poquito de aceite los aliños a sofreír.

- Add the seasonings to a frying pan with a little oil and sauté.
- Picar el tomate y rallar.
- Chop the tomato and grate.
- Cuando las berenjenas estén sancochadas, esperar a que enfríen, luego sacarle lo de adentro ( la pulpa)

- Después de sacar la pulpa, se agrega en el sartén donde están sofrito los aliños.
- Agregar sal, orégano y color.
- Ahora en una tortera con papel aluminio, colocar las berenjenas para ser rellenas.

- Add salt, oregano and color.

- Licuar la avena en hojuela, para dejarla en harina.
-Agregue la harina de avena sobre las berenjenas rellenas. - Finalmente picar el cilantro en trozos pequeños y decorar.
- Llevar al horno por 15 minutos.

- Add the oat flour over the stuffed eggplants.
- Finally chop coriander into small pieces and garnish.
- Bake in the oven for 15 minutes.
