Winter special vegan recipe: gajar matar sabzi # good food good mood 16

Hello foodies!

How are you all ? Hope you all are good and enjoying yourself and the winter season. I'm also good and enjoying the winter season with sunlight and winter special food :⁠,⁠-⁠)

Today for lunch i made winter special gajar matar sabzi. This is a indian recipe made with carrot and green peas and some spices. For more Nutrition you can add methi leaves in it. Some also add potatoes but i never tried it . This vegan dish goes well with hot roti or chapti 😋 This is a satisfied meal in winters. Since our childhood we have been enjoying this dish. So it become more special for me when we prepared and enjoyed first time for the season.

We made often this dish during winter season. It is simple to cook and also have good nutritious value. This recipe also don't need onion and tomato, so it's easy, simple and basic vegan recipe.

Ingredients list:

Carrot 5-6 medium size
Green Peas (1 bowl)
Fenugreek leaves (methi) 1 bowl
Mustard oil 2 tbsp
Salt according to taste
Cumin seeds ( jeera)
Mustard seeds ( rai)
Hing 1 pinch
Red chilli powder 1 tbsp
Garam masala 1/2 tsp
Turmaric Powder 1 tbsp
Coriander powder 2 tbsp
Ginger/garlic (optional)
Lemon juice (optional)

Method:

preparation:

  • First chopped carrot. Wash them properly before chopped. Peal off the skin and cut into small pieces.

I always prefer red carrot. Because it gives a sweet flavour and taste good. Also cut the carrot into small pieces. If you want to make it in presure cooker you can cut big pieces. I cut pieces like this :

  • Now take fresh green peas. I don't boil it because peas are fresh and soft. If you use frozen peas make sure they cook well. Otherwise You can put peas in hot water for some time .

  • Now take Fenugreek leaves. Wash them properly and cut finely. ( This is totally optional). You can skip to add Fenugreek leaves.

Now all ingredients are ready.

Cooking procedure:

  • Heat mustard oil in a pan .

  • When oil is really hot add cumin seeds and hing in it. Make sure if you are using mustard oil it is hot enough to get rid of the raw smell of oil.

  • When seeds are crackle add peas and chopped carrots.

  • Cover it and cook the veggies for 2 minutes on the medium flam. Now add Fenugreek leaves in it.

  • Add salt , turmaric powder, red chilli powder, coriander powder and 2 tsp water . Mix well and cook for 2-3 minutes. Until veggies get soft.

  • My carrot was super fresh so it cooked soon. It take 5-10 minutes depending on the carrot and cutting.
    Now sprinkle garam masala and if you want tang flavour add lemon juice too.

  • Your gajar matar sabzi is ready to serve.

  • Serve it with hot roti.

I enjoyed it with jwar roti. You can enjoyed it with chapti and any other roti. Have you ever tried it? Or which roti do you prefer with this vegan gajar matar sabzi 😀
