Chocolate Cauliflower
Two simple ingredients come together to create a spectacular snack you simply must try. This dish perfectly blends boiled cauliflower with melted chocolate. It offers a sweet flavor profile with subtle bitter chocolate notes—in my opinion, it’s a diet-friendly treat worth experiencing.

Here’s a tip: use the best quality vegan chocolate—look for premium varieties with low sugar content—to ensure the best flavor.
Ingredients


150 grams of chocolate bar
Preparation
I cut both the chocolate bar and the cauliflower into small pieces, then boiled the cauliflower in water.


Boil until tender, drain, and transfer to a blender. Add the chocolate pieces; there’s no need to melt them beforehand since the cauliflower is still hot.




Blend until smooth and perfectly combined. Then, pour the mixture into a mold lined with parchment paper.


Spread it evenly and place it in the freezer until solid—about 3 to 4 hours—then remove and sprinkle with extra chocolate.


The Result

Slice and serve on a plate; just look at that tempting chocolate. You’re probably curious about the taste, right? I was skeptical at first, too, but it turned out absolutely delicious—just as rich and chocolatey as you’d imagine.

There is no trace of the cauliflower flavor; the chocolate taste dominates completely. It turns out that chocolate can mask the taste of cauliflower.

Thanks for this recipe, @nurfay! I love that it started from cauliflower harvested in your own mini-garden. A no-bake chocolate treat with only two ingredients, where after freezing the cauliflower can't be tasted and it feels like chilled chocolate ice cream, is a real surprise. Grazie per questa ricetta, @nurfay! Mi piace che sia nata dal cavolfiore raccolto nel tuo mini-orto. Un dolce al cioccolato senza cottura con soli due ingredienti, in cui dopo il congelamento il cavolfiore non si sente e sembra un gelato al cioccolato, è una vera sorpresa. Le foto del procedimento, dalla bollitura al frullatore e allo stampo foderato, rendono tutto facile da seguire, e il blocco affettato con il cioccolato sopra ha un aspetto molto invitante.
Anch'io coltivo verdure, quindi sono curioso di usarle nei dolci. Hai provato la stessa idea con un'altra verdura del tuo orto, e quale ha funzionato meglio?

IT LOOKS AMAZING. I've seen it done with powdered cacao, cauli and broccoli and banana - that way you can add your own sweetener I guess. Yours looks like fudge! Yum.
