Good day community.

Today I want to show you the preparation of a light dish, full of orchard flavors, powerful and very special since it is a modification of a recipe that I made in one of my trips to Mexico. For this occasion, I took advantage of a weekend trip to a small town in my province where I was able to buy these fresh products, from homemade organic gardens. Zucchini, aubergines and peppers are essential to prepare it and can be combined with many other options. I have also used modern kitchen utensils because I think that the proper use of them gives different results, they help in the preparation and for me they have become very practical tools for cooking.


Vegetable fajitas

INGREDIENTS FOR 4 PEOPLE:

  • 1/2 kg of zucchini
  • 3 aubergines
  • 1 medium onion
  • 1 green pepper
  • 2 cloves of garlic
  • 300 gr. Red beans
  • 3 green chillies in vinegar
  • Wheat cakes
  • 200 ml. olive oil
  • 50 ml diluted soy sauce
  • Salt and spices to taste

METHOD OF PREPARATION 4 RATIONS:

The first thing is to peel and prepare the vegetables in small cubes, I cut the aubergine last since it oxidizes immediately and can acquire a dark color that I do not want. I cut the onion, the zucchini and I prepare the garlic cloves that I pass through a grater. I have also taken the opportunity to take a photograph of a bundle in the form of a string for the garlic, this type of way of storing and preserving the garlic that is consumed throughout the year in this way has always caught my attention.

This is where the introduction to that modern kitchen comes in with the use of the kitchen robot, the Cheffomatic, as it is called. I prepare all the ingredients to deposit them in order in the preparation container. There are different programming and time modes depending on the type of food you prepare, so both the temperature and the cooking point are adjusted to the ingredients you are preparing. Something to keep in mind is that these programs that these devices have are usually very measured, but the human hand and eye are necessary for the food to be as one really wants. Sometimes add 1 more minute or change the type of cooking by combining several programs. The experience of working with him is what gives good results.

Once the vegetables are cooked and ready, it is important to drain the vegetables well of juices when removing them, I proceed to prepare the rest of the dish, assembling with some ingredients to taste. I previously prepared the beans, preferably red or black, in a small saucepan over low heat with water and salt. Also prepare the wheat flour dough in this case modeling it to prepare the cakes in the pan. I try to make them and cover them as long as they are prepared since their consumption must be hot. Then take the pickled chillies in vinegar and chop them, the chilli should be added to taste or omitted. Then it only remains to mount the cakes by putting the ingredients and serve. Fajitas vegetales
Buenos días comunidad.

Hoy quiero mostrarles la elaboración de un plato ligero, cargado de sabores de huerta, potente y muy especial ya que es una modificación de una receta que en uno de mis viajes realicé a México. He aprovechado para esta ocasión un desplazamiento de el fin de semana hacia un pequeño pueblo de mi provincia donde pude adquirir estos productos frescos, de huertos ecológicos caseros. Calabacín, berenjenas y pimiento es lo esencial para prepararlo y se puede combinar con otras muchas opciones. También he utilizado utensilios modernos de cocina porque pienso que el uso adecuado de ellos da distintos resultados, ayudan en la elaboración y para mi se han convertido en herramientas muy practicas para cocinar.

INGREDIENTES PARA 4 PERSONAS:

  • 1/2 Kg. de calabacín
  • 3 berenjenas
  • 1 cebolla mediana
  • 1 pimiento verde
  • 2 dientes de ajo
    -300 gr. alubias rojas
    -3 guindillas verdes en vinagre
    -tortas de trigo
  • 200 ml. aceite de oliva
  • 50 ml salsa soja diluida
  • sal y especias al gusto

METODO DE PREPARACIÓN 4 RACIONES

Lo primero es pelar y preparar en pequeños cubos las hortalizas, la berenjena la corto de último ya que enseguida de oxida y pueda adquirir un color oscuro que no deseo. Corto la cebolla, el calabacín y preparo los dientes de ajo que paso por una rayadora. He aprovechado también para realizar una fotografía de un atado en forma de ristra para los ajos, siempre me ha llamado la atención este tipo de manera de almacenar y conservar los ajos que se van consumiendo a lo largo del año de esta forma.

Aquí es donde entra la introducción a esa cocina moderna con el uso del robot de cocina, el Cheffomatic, que así se llama. Preparo todos los ingredientes para irlos depositando por orden en el recipiente de preparado. Hay diferentes modos de programación y tiempo según el tipo de comida que prepare, así tanto la temperatura como el punto de cocción quedan ajustados a los ingredientes que estemos preparando. Algo a tener en cuenta es que estos programas con los que cuentan estos aparatos suelen estar muy medidos pero la mano y el ojo humano son necesarios para que la comida quede como realmente quiere uno. A veces aumentar 1 minuto más o cambiar el tipo de cocción combinando varios programas. La experiencia de trabajar con él es el que da bueno resultados.
Una vez cocinados y ya en su punto las verduras, el importante escurrir bien de jugos las verduras al sacarlas, procedo a preparar el resto del plato montando con algunos ingredientes a gusto. Previamente preparé las alubias, bien rojas o negras preferentemente, en una pequeña olla al fuego lento con agua y sal. También prepare la masa de harina de trigo en este caso modelándola para preparar las tortas en la sartén. Procuro ir haciéndolas e irlas tapando en la medida que estén preparadas ya que su consumo debe ser en caliente. Luego tome las guindillas encurtidas en vinagre y las pique, la guindilla se le debe echar al gusto u omitirla. Luego ya solo queda montar las tortas poniendo los ingredientes y servir.
