Creamy Oatmeal with Caramelized Apples

Today, I'm excited to share a simple yet heavenly recipe for a vegan oatmeal that's as delightful as it gets. Picture this: a bowl of velvety oatmeal, boiled to perfection in almond milk, and topped with the caramelized sweetness of apples. Trust me, it's like having dessert for breakfast, but without the guilt!

First things first, let's talk about the oatmeal. By cooking it in almond milk, it goes to a whole new level of creaminess. The almond milk gives it a subtle nuttiness that pairs perfectly with the hearty oats. And the best part? It's entirely plant-based!

Now, let's move on to the star of the show – the caramelized apples. Here's the magic: minimal effort, maximum flavor. Chopped apples gently cooked until they become golden and sticky. The result? A luscious topping that takes this oatmeal from ordinary to extraordinary.

You will need:
This makes about 2 servings

  • 100 g. oats
  • 500 ml. of plant-based milk (unsweetened almond milk is used in the recipe)
  • 0,5 teaspoon of ground cinnamon
  • 1 tablespoon of maple syrup (or more if you want it sweeter)
  • 2 tablespoons of peanut butter (without added sugar)
  • pinch of salt

For the caramelized apples:

  • 2 medium-sized apples
  • 2 tablespoons of coconut oil (approx. 25 ml)
  • 3 tablespoons of maple syrup (approx. 30 ml)
  • 0,5 teaspoon of ground cinnamon
  • pinch of salt

Preparation

  1. Peel and dice the apples into cubes.

    2.In a saucepan, combine the oats, milk, cinnamon, syrup, nut butter and salt.

    Cook everything over medium heat (once boiling, cook for about 10 minutes, stirring continuously, or until the oats are fully swollen). The oats will also thicken once they cooled off a bit.

    3.Heat the coconut oil in a frying pan and add the chopped apples with all the spices - syrup, cinnamon and salt.

    Cook, stirring constantly, for about 8-10 minutes or until the apples are at the desired consistency (they should not fall apart too much).

    4.Serve the porridge with the caramelised apples on top and other accompaniments if desired.
