Chocolate Flavored Crispy Cookies Recipe.

In Sri Lanka, the month of April is a time of special celebrations. There’s something magical about the rich aroma of chocolate filling the kitchen, especially as it begins to bake to perfection. Today, I’m preparing a special treat – soft and chewy chocolate cookies. These combine the irresistible chewiness of a classic biscuit with the deep, comforting flavor of cocoa and a touch of simple, delightful sweetness. With just a handful of basic ingredients and an easy method, these cookies are perfect for tea time, as a snack for the kids, or even as a part of a homemade festive gift box. It’s a recipe that brings joy and satisfaction with every bite. So let’s take a look at how to prepare these step by step!

Materials Used.

Rice flour 200g.
2 Tablespoon of cocoa powder.
3 Tablespoon of Powdered sugar.
1/2 teaspoon of salt.
Coconut milk 400ml.
Coconut oil for frying.
Rosette cookies tool.

The cooking process as follows.

First, take a bowl and add rice flour, powdered sugar, cocoa powder, and a pinch of salt. Mix all the dry ingredients thoroughly until well combined.
Next, gradually add coconut milk, a little at a time, while stirring continuously to create a smooth, pourable batter.

Next, pour some coconut oil into a pan and place it on the stove over medium heat, allowing the oil to heat up well.
Once hot, take the kokis mold and dip it into the oil to heat it thoroughly. Then, dip the hot mold halfway into the prepared batter—making sure not to fully submerge it.
Immediately place the mold into the hot oil. As the batter begins to cook and slightly detach, gently shake the mold to release the kokis into the oil.
Fry until the kokis turns golden brown, then remove and drain on a paper towel.

Once perfectly baked to a golden brown, these chocolate-flavored crispy cookies are ready to be shared—or simply enjoyed by yourself. With their delightful crunch and rich flavor, they’re sure to become a family favorite.
