Young jackfruit, known for its meaty texture and rich flavor, becomes even more delicious when cooked in creamy coconut milk. This traditional Sri Lankan curry blends the earthy essence of tender jackfruit with the subtle sweetness of coconut and a mix of fragrant local spices. It's a wholesome dish that brings together comfort, nutrition, and the aroma of home-cooked goodness. I must say, this is truly a nutritious and hearty meal. So, let’s see how to prepare this flavorful curry step by step!

Materials Used.

Jackfruit pieces, peeled and cut from a small young jackfruit.
Coconut milk 600ml.
4 cloves of garlic, peeled.
A small onion.
Curry leaves.
1 Pandan leaves.
2 pieces Garcinia morella.
Coconut water 400ml.
Salt to taste.
3 Teaspoon of roasted chili powder.
2 Teaspoon of roasted curry powder.
1 Teaspoon of Black pepper.
1/2 Teaspoon of roasted mustard powder..
1 Teaspoon of Turmeric powder.
A piece of cinnamon.
1/2 Teaspoon of Fenugreek seed.
2 crushed anise and cloves.

The cooking process as follows.

Let’s begin preparing this dish now. First, finely slice the onions and garlic.

Next, take a cooking pot and place it on the stove. Add the chopped young jackfruit pieces. Then add goraka (Malabar tamarind), turmeric powder, and salt as needed. Pour in a coconut water and cook until the jackfruit becomes tender.

Now, to the boiled jackfruit, add black pepper powder, roasted curry powder, roasted chili powder, garlic, onions, cinnamon, pandan leaves, lemongrass, cloves, and cardamom. Mix everything well to combine all the flavors.

Finally, add coconut milk and salt if needed, and cook well until everything is blended. Then, add a little roasted fenugreek powder and let it simmer for a little longer before removing it from the heat.
