Our country is home to several varieties of cucumbers. Today, I am preparing a dish using a specific type of cucumber known for its medicinal value. Cucumber is not only a refreshing vegetable but also a highly nutritious ingredient that can be transformed into a delicious curry. In Sri Lankan cuisine, cucumber curry is a light yet flavorful dish made with coconut milk and aromatic spices. It is not only a nutritious option but also a perfect choice for vegetarians. This wholesome meal is easy to prepare and pairs wonderfully with rice and other traditional dishes. Let’s explore step by step how to make this delightful and healthy cucumber curry! 🥒

Materials Used.

A little chopped onion.
2 cloves of chopped garlic.
2 Chopped green chilli pods.
A piece of cinnamon.
curry leaves.
2 cloves. 1 Pandan leaves.

Cucumbers 300g.
Salt to taste.
1 1/2 Cup of coconut milk.
2 Tablespoon of Rice.
1 Cup of water.
2 Tablespoon of Grated Coconut.

1 Teaspoon of Mustard Seeds.
1 Teaspoon of Cumin.
1 Tablespoon of roasted curry powder.
1 Teaspoon of curry powder.
1/2 Teaspoon of turmeric powder.
1 Teaspoon of Chilli Powder.
Coconut oil.

The cooking process as follows.

Now, let's get ready to prepare the recipe . First, wash the cucumber thoroughly and cut it into small cube-shaped pieces. If there are seeds in the center, remove them.

Now, place a pot on the stove and lightly fry the grated coconut and rice.

Next, take a mortar and pestle and grind the roasted rice and coconut well. Alternatively, you can use a blender for this step. Once ground into a fine mixture, add it to the coconut milk and mix well.

Now, add the roasted curry powder, turmeric powder, chili powder, grated coconut, and salt as needed to the chopped cucumbers. Mix everything well and let it sit for a while to absorb the flavors.

Now, place a cooking pot on the stove and add about two tablespoons of coconut oil. Once the oil is heated, add mustard seeds, cumin, cinnamon, cardamom, curry leaves, chopped garlic, green chilies, and salt. Sauté the mixture until it becomes aromatic and lightly golden.

Next, add the prepared cucumber pieces and mix well. Add a cup of water and let it simmer. Once it has softened, add the coconut milk mixture and cook for another 3 to 4 minutes. Then, remove it from the heat and serve.

So, here’s a simple yet flavorful Sri Lankan cucumber curry ready to be enjoyed! The creamy texture, enhanced by the mild sweetness of coconut milk and the warmth of aromatic spices, makes this dish both delicious and nutritious. You can serve it with rice or even pair it with simple flatbread.
