Breakfast is the most important meal of the day, and preparing something delicious and nutritious sets a positive tone for the morning. Today, I’m going to try a special version of rice cooked with coconut milk — a simple yet flavorful dish that captures the rich essence of traditional Sri Lankan breakfasts. The creamy texture of the coconut milk blends beautifully with the soft rice, creating a satisfying, aromatic, and naturally comforting meal. Let’s see how I prepared it in a slightly different way. 🍚🥥

Materials Used.
Washed white rice 300g.
3 Cup of coconut milk .
Salt to taste.
3 Finely chopped tomatoes.
2 Teaspoon of chilli powder.
1 Teaspoon of crushed chili powder.
3 Tablespoon of vegetable oil.
2 finely chopped onions.
1/4 Teaspoon of Mustard seed.
1 Teaspoon of Lime juice.

The cooking process as follows.
Now we are ready to prepare the dish. First, take a wooden mortar and add chili powder, crushed chili flakes, and salt to taste. Grind them well together until they form a smooth mixture. Once done, set it aside.
Next, place a pan on the stove and add a little vegetable oil. Once the oil is heated, add mustard seeds and chopped onions, stirring them together until the aroma is released. Then, add the ground chili mixture and combine well to create a flavorful blend.
Next, add the chopped tomatoes and a little lemon juice to the mixture.
Now, add the washed rice into a pot.Then pour in some coconut milk and add salt to taste. Place it on the stove and cook until the rice is well boiled and soft.
Next, take a cup and add a portion of the cooked rice into it. Then, place a little of the prepared onion and chili mixture on top. Add another layer of rice to cover the mixture and gently press it down to shape it nicely, as shown below.
This coconut milk mixed rice is not only healthy but also a wonderful way to start the day with warmth and flavor. It’s easy to prepare, gentle on the stomach, and full of natural goodness. Whether you enjoy it with a spicy curry, a touch of sweet sambol, or simply on its own, this breakfast dish is sure to bring happiness to your morning and energy to your day. That’s all for today.
