Kiribath and Seeni Sambal for Vesak Full Moon Poyaday.

Hi my dear friends,

Vesak is a significant festival celebrated in Sri Lanka to commemorate the birth, enlightenment, and passing away of Lord Buddha. It is a time when Buddhists come together to perform acts of kindness and generosity, and to reflect on the teachings of the Buddha. During this time, many Sri Lankan families choose to follow a vegetarian diet as a way of showing respect for all living beings. So today i prepared the kiri bath (milk rice ) and seeni sambal for vesak full moon poyaday breakfast.

Kiribath is a traditional Sri Lankan dish that is often prepared during festivals such as New Year , Vesak. This simple and delicious dish is made using rice and coconut milk and is often served with a variety of curries, like lunu miris or siini sambal....

Ingredients

2 cups of rice

4 cups of water

2 cups of thick coconut milk

Salt to taste

Instructions:

Rinse the rice thoroughly and add it to a rice cooker with 4 cups of water. Cook the rice until it is fully cooked and the water has been absorbed.

Once the rice is cooked, add 2 cups of thick coconut milk and a pinch of salt to the rice cooker. Stir the mixture until the coconut milk is evenly distributed.

Turn on the rice cooker and allow the rice and coconut milk mixture to cook for an additional 10-15 minutes. Make sure to stir the mixture occasionally to prevent it from sticking to the bottom of the rice cooker.

Once the kiribath is fully cooked, remove it from the rice cooker and transfer it to a serving dish. Use a spatula or spoon to smooth the surface of the kiribath. But here i used traditional way to cut banana leaf.

Allow the kiribath to cool for a few minutes before cutting it into desired shapes and sizes.

Now you can serve the kiribath with your favorite lunu miris or seeni sambal and enjoy!

This is the method i used to make seeni sambal...

Slice the onions.

Add the chilly flakes, curry leaves, garlic, turmeric powder and tamerind to it.

Heat a pan in low medium and add musterd and onoin mixture.

Cook the onions on low heat for 3 - 6 minutes.

Finally add the sugar your taste and cook covered for 2-3 minutes.

Taste and add more sugar and salt if needed.

Now kiribath and seeni sambal are ready enjoy !!!
