Eggplant moju is a beloved Sri Lankan dish that brings together sweetness, tanginess, and spice in perfect harmony. Known for its deep flavors and soft, melt-in-the-mouth texture, this traditional moju is often served at special occasions as well as everyday meals. Before preparing this delicious dish, it’s important to appreciate how simple ingredients—eggplant, onions, spices, and vinegar—come together to create a rich and vibrant accompaniment that enhances any plate of rice.

Ingredients...
Eggplant 300g.
1/4 Cup of grated jaggery.
1/4 Cup of Vinegar.
A little cloves and cardamom.
About 7 to 8 green chilies.
2 Teaspoon of Mustard cream.
2 Tablespoon of Mango chutney.
2 Teaspoon of crushed chili powder.
1/2 Teaspoon of turmeric powder.
Some small onion.
1 Teaspoon of Chili powder.
1/2 Teaspoon of curry powder.
Coconut oil for frying.

The order of preparation.
Step 1:-
First, I washed and cleaned the eggplants well and cut them into thin slices. I also sliced the green chilies lengthwise. Then I chopped the onions and garlic and set them aside.

Step 2:-
Next, add a little turmeric powder and salt to the sliced eggplant and mix well. Then add some coconut oil to a pan and heat it. Once the oil is hot, add the eggplant, chili pieces, and onions, and fry them until they turn golden brown.

Step 3:-
Next, I took a blender and added the grated jaggery, Mustard paste, mango chutney, garlic, cloves, chili powder, curry powder, and vinegar into the cup. I blended everything well until it turned into a thick, smooth paste.

Step 4:-
Finally, I took a clay pot and added the fried eggplant, onions, green chilies, and the blended paste. I mixed everything well together. And that’s it — it tastes absolutely delicious!

Preparing eggplant moju at home is a delightful experience that fills the kitchen with familiar aromas and brings a sense of tradition to your table. Once made, it keeps well and tastes even better with time, making it a perfect side dish for busy days or festive meals.
