Let's make Malay Pickle (Sri Lankan Style).

Locally known as Achcharu, Malay Achcharu is one of the most beloved traditional pickles in Sri Lanka. Influenced by the Malay community, this dish carries a rich history, blending vegetables, spices, and a sweet-sour base into one. Its unique taste comes from the perfect balance of sweetness, tanginess, and spiced notes, making it an essential accompaniment for rice and festive meals. Prepared with colorful vegetables such as carrots, onions, and capsicum along with exotic spices, this pickle is not only delicious but also a celebration of Sri Lanka’s culinary diversity.

Ingredients...

🌺 A few green chilies.
🌺 2 or 3 Carrot.
🌺 2 fish chili peppers.
🌺 4 Tablespoon of Vinegar.
🌺 Dates 100g.
🌺 3 Onions.
🌺 A piece of small ginger.
🌺 About 5 cloves of garlic.
🌺 2 pieces of cinnamon.
🌺 1 1/2 Teaspoon of chili powder.
🌺 1 Teaspoon of Mustard powder.
🌺 2 Teaspoon of sugar.
🌺 Salt as needed.
🌺 1 Teaspoon of pepper powder.

The order of preparation.

Step 1:-

First, wash and clean the carrots, onions, dry chilies, and green chilies thoroughly. Then cut them into pieces as shown below. Slice the green chilies lengthwise.

Step 2:-

Next, for blending, add garlic, dates, sugar, salt, ginger, chili powder, black pepper powder, and mustard powder. Then add a little vinegar and blend everything together to make a paste.

Step 3:-

Next, put the prepared paste into a clay pot and place it on the stove. Cook it gently for about 3 minutes on low heat.

Step 4:-

Next, add the chopped carrots, capsicum, green chilies, and onions to the paste and mix well. Immediately remove it from the stove.

Thus, in this way, you can prepare a dish that can be preserved for about a week without spoiling. Malay Achcharu is not just a side dish – it is a flavorful tradition that has been passed down through generations. Whether served at weddings, special occasions, or alongside a plate of rice and curries, it always enhances the meal with its distinctive taste.
