Ash Plantain Moju (ripe ash banana pickle) is a beloved Sri Lankan dish that perfectly blends the subtle flavor of ash plantains with the rich aroma of traditional spices. This delicious and nutritious recipe adds a burst of flavor to any meal, offering a delightful balance of sweetness, tanginess, and spice.The ash plantain is carefully fried until golden brown and then mixed with a combination of onions, vinegar, and chili to create a truly flavorful and mouthwatering dish.
Not only is it tasty, but it’s also rich in fiber and essential nutrients — a wonderful way to enjoy wholesome, plant-based goodness with a local touch.


Ingredients...
Ash plantain 150g.
3 fish chili pods.
2 green chili pods.
A piece of ginger.
A piece of cinnamon.
2 Onion.
1/2 Cup of coconut milk.
About 2 cloves of garlic.
Salt as needed.
1/2 Teaspoon of chili powder.
1/2 teaspoon of curry powder.
1/2 teaspoon of pepper powder.
1 Teaspoon of mustard powder.
Coconut oil for frying.

The order of preparation.
Step 1:-
First, remove the peel from the ash plantains and cut them into small cube-shaped pieces. Since they tend to turn yellow quickly, place the pieces in water to prevent discoloration.
At the same time, finely chop the onions, green chilies, Maldivian fish (if using), and garlic to prepare them for mixing later.

Step 2:-
Next, fry the chopped ash plantain pieces until they turn a light golden color.

Step 3:-
Next, place a pan on the stove and add about two tablespoons of coconut oil. Once the oil is heated, add the chopped onion, ginger, salt, cinnamon, chili powder, curry powder, pepper powder, and mustard powder. Mix everything well and let it sauté for a few minutes until fragrant.

Step 4:-
Next, add the fish chili pieces to the mixture and stir well. Then pour in a little coconut milk and mix to combine. After that, add the fried ash plantain pieces, stir everything together gently, and let it cook for a few minutes until all the flavors blend nicely. Finally, remove it from the stove and serve warm.
