Ingredients...
🌺 2 medium-sized potatoes.
🌺 Bean 100g.
🌺 2 cloves of garlic.
🌺 2 Green chili pods.
🌺 Curry leaves.
🌺 1 Onion.
🌺 2 cinnamon sticks.
🌺 Salt as needed.
🌺 1/2 Teaspoon of turmeric powder.
🌺 1/2 Teaspoon of chili powder.
🌺 1/2 Teaspoon of curry powder.
🌺 1 Tablespoon of coconut oil.
🌺 1 Cup of coconut milk.
The order of preparation.
Step 1:-
First, wash and clean the beans, potatoes, onions, garlic, and green chilies thoroughly, then slice them thinly as shown below.
Step 2:-
Next, take a pan and add about two tablespoons of coconut oil, then place it on the stove. Once the oil is heated, add the garlic, onion, curry leaves, potatoes, cinnamon stick, fenugreek, chili, and turmeric, and mix well.
Step 3:-
Next, add the chopped beans along with half a cup of coconut milk, mix well, and cook for about 10 minutes.
Step 4:-
Next, add the remaining coconut milk and cook for about 2 more minutes before removing from the stove.
Serve this potato and bean curry with steamed rice, roti, or bread for a complete meal. Its hearty flavors, combined with the nutritional benefits of potatoes and beans, make it a favorite for everyday lunches or dinners.
