A Traditional Lentil snack named "Vada" from my hometown.

Greetings dear Hiveans of the Plant Vegan group. Hope all are keeping in good health, as all of us are part of the vegan group.

The so called Lentil snack is named as "Vada" in my place, is a famous delight to the young and old and is made of Urad Dal (the name of the Lentil). In minutes it will vanish when served in plate, its my assurance to you.

Usually, this is eaten with a breakfast called "Dosa" or with "pongal". A much in demand, food here. One of the main side dish on occasions.

Let's go for the recipe

INGREDIENTS REQUIRED

  • Lentil (Urad Dal) - 1 cup
  • Onion - 1 medium sized
  • Ginger - 1/2 inch in size
  • Green Chilli - 2 to 3 as per your spice
  • Curry leaves - a few in hand
  • Salt - as per your taste
  • Whole black pepper - 10 (optional)
  • Oil for frying - as required for deep frying.

STEP - 1

Wash the lentil two to three tines in water. Drain them. Now, soak the lentil in fresh water for atleast 4 hours. After fours hours transfer them to a mixer jar along with some salt and grind it well, adding only 1/4 th of water. The same cup used for measuring Lentil should be used for measuring water. As the quantity of water is less, do not run the
mixer continuously. Give a break after
each minute, and use a ladle to mix the batter every now and then in the jar. This way you get a semi hard batter ie., you can take it in your hand in a round shape.

STEP - 2

Refrigerate the batter for atleast an hour. Now chop the onions, ginger, chilli and curry leaves into a very small size and mix it with the batter. Make sure they are finely chopped.

STEP - 3

Mix the batter well with a fork, like how you whip an egg. So that it becomes fluffy, which adds to the inner softness. Now place the oil in the gas stove at medium flame, once the oil is heated start putting one flattened ball at a time.

Now how to flatten it-

Here, I took a plantain leaf else, you can take a foil /plastic roll. Keep aside a bowl of water, so that you can dip your hand and rub them in the plantain leaf /foil/ plastic before placing a small ball.
Now flatten it in a circle shape and make a small hole in the centre with your index finger. Now remove it from
the leaf and put them in the heated oil


The tea strainer idea was my daughter's idea, exclusively. She browsed in one of the social media site.

Another easy method to circle it is by using a tea strainer. Take a clean tea strainer, and at the back place a ball of
batter and just flatten it, make a small
hole at center and place it in hot oil. You will get your favorite Vadas.

STEP - 4

The final Vadas ready to be served

Keep the flame in medium, so that it
doesn't burn. Flip it two to three times
and in 2 minutes its ready for serve. The ideal round shaped vada is ready.

Let me tell you about its texture. Its crispy out and soft inside. It is best when eaten with a hot cup of tea. It goes well with South Indian Sambhar and coconut chutney.
