And wellness we all know comes from taking good care of ourselves by eating healthy nutritional foods like the one am about to share and teach you in this tutorial.
Today’s recipe a grilled spicy veggie stuffed plantains for lunch 🥙 . So delicious and irresistible, as the combination of onions 🧅, cherry tomatoes 🍅 and red chilies 🌶 aroma made it so appetizing.
Who does not love plantains? Even kids love 💕 it most. This recipe is a very simple one with straightforward step by step since all we do first is to grill the plantains. A quick lunch we can serve once the plantains are well grilled. Its a meal 🥘 we will love and enjoy.
Here I take you along the steps to prepare this lovely appetizing lunch 🥙
INGREDIENTS:
4 medium size ripe plantains
1 medium onions 🧅
1 large cherry tomatoes 🍅
Sone red chilies 🌶
1/2 teaspoon of black pepper
1/4 teaspoon of salt to taste
Oil to fry.
STEPS FOR PREPARATION :
Step 1.
To prepare this quick and simple lunch I will start by washing the plantains, leave it to dry, before I chop off the two ends .
Step 2.
I will peel off the back and slash open the middle of each plantain.
Step 3.
Next I will sprinkle some black pepper and salt on the plantains as shown here.
Step 4.
Then set the rack and place the plantains on it for grilling in the oven.

Step 5.
And will take them into the oven to start grilling for first 40 minutes at 220 Celsius, then will flip it over to grill for another 30 minutes to get a well grilled fine roast.

Step 6.
While grilling the plantains, I will wash, slice and chop the onions, cherry tomatoes, chilies readily.
Step 7.
And once the grilling is done, I will go on to fry the vegetables, first adding the onions 🧅 to fry tenderly.
Then cherry tomatoes 🍅and chilies adding just little salt, stir to incorporate to taste
Step 8.
Once the veggies is fried, I will set it down to stuff them into the slashed grilled plantains.
What a grilled plantains for lunch 🥙. So delightful and appetizing. Even the veggies made it irresistible. You can imagine how delicious this will taste if you prepare it for the whole family or your loved 🥰 ones. The time I put into this is so worth it.
