Am always looking forward to the weekend when I take out time to bake something delicious 🤤 that makes the kitchen smells so good. Especially those homemade loafs 🥯that taste fresh with flavors. And today’s recipe is a roasted coconut with drops of lime round loaf.
This recipe is so simple and straightforward. The only thing we need do is to chip our fresh coconut 🥥 in small dice and roast it slightly in the oven to obtain that crips and burnt 🔥taste that leaves a long lasting flavors in coconut recipes. The drops of lime an added bit of sourdough taste with aftermath flavor to the loaf 🥯.
I love trying different kinds of bread baking with various added ingredients as it gives us room to know what flavors to stick to if we always share them with family or loved ones who makes second choice in choosing with us. And my daughter confirms she loves this loaf due to the roasted coconut chips that made it taste great 😊
Here I share the process to this recipe with step by step.
INGREDIENTS
100 g of wheat 🌾 flour 200 g of All purpose flour 1/2 of a medium cracked coconut 5 teaspoons of baking sugar Juice of 1 medium lime 11/2 teaspoons of dry yeast 1/4 teaspoon of salt 10 ml of vegetable oil
STEPS FOR PREPARATION:
Step 1.
We start this recipe by first removing the cracked coconut 🥥, slice it and cut it into tiny chips

Step 2.
We take the coconut into a baking pan to roast it for about 2 minutes.

Step 3.
Next we add our flour into a large bowl, adding also the dry ingredients. Sugar, salt and yeasts.
And stir then into the flour
Step 4.
We add the roasted coconut into the flour.
Deseed the lime and squeeze it in as above
Step 5.
To process into a dough, we stir , add warm water and gradually mix, incorporating all.
As here above .
We add the vegetable oil for a fine knead.
Step 6.
Here we cut the dough into equal parts and into smaller sizes.
Glaze the pan and mold each into a round ball ⚽️ dough.
Step 7.
We leave in a warm place covered for about 20 minutes to increase in size
Then we bake for 15 - 18 minutes at 180 Celsius.
Leave to cool before we serve. A delicious flavorful loaf of roasted coconut with little sourdough taste. And I did left it just a few seconds more to crunch up on the top giving it an artistic look.
You can bake this bread in your own version choosing how you want your coconut 🥥. Shredded, grated or chopped before roasting it for that excellent flavor taste. Don’t forget your squeeze of lime 🍋.
