Its all to our benefits if we incorporate more of plant base in our meals and also endeavor to bring new recipes into our kitchen as it will help us to enjoy different meals throughout the week just like this vegetable π₯ yam dish I prepared today to share with you.
How do you enjoy yam π as a dish in your country because in my country Nigeria π³π¬ yam is a rich staple that can be prepared in various ways with various ingredients. In fact, we celebrate π new yam festival every year around August the 8th month, and at this time usually, the yam is so young and not too sweet π₯. So it will take some months ahead for the yam to start drying and becomes sweeter and this is when many people like to enjoy yam in different recipes as a staple. Although at this very time it has become too expensive because many have stored it in their ban for selling.
We can enjoy yam π in a Pepple soup π₯£ recipe with lots of pepper and spices, make boiled yam with egg π³ or tomatoes π sauce. And we can as well enjoy our yam tuber with lots of vegetables just like I did to with basil πΏ leaves π and spices, taking the dish to another level. This is the best way to enjoy yam at this time of the year making it rich and delicious enough to spark up our appetite
Just turn that tuber of yam π in your pantry into a delicious delightful meal π₯ family will love β€οΈ as I show you the steps for this recipe.
INGREDIENTS:
1/4 large tuber of yam
Bunch of basil πΏ leaves π
3 large fresh tomatoes
1/4 large onion
2 yellow fresh hot pepper
1/2 teaspoon of curry powder
1/2 teaspoon of salt
1/2 teaspoon of chili powder
1/2 teaspoon of thyme herb
Enough red palm oil
STEPS FOR PREPARATION:
Step 1.
I will start the recipe by first cutting the yam in rounds , then cut each in straight lines .
Peeling and cutting in thinly squares as above.
Step 2.
Will wash the yam properly, taking it into a pot readily.here.
Then will add enough water for cooking readily.
Step 3.
I will slice and wash the basil leaves π vegetable first .
Then wash and slice the tomatoes, onions and hot pepper here.
And here have them readily
Step 4.
Will set the yam on the cooker adding salt to it and covering the pot to start cooking.
And in about 10 minutes, I will check with a fork for tenderness.
Step 5.
And will add the spices here. The chili powder, the curry and thyme herb
Then stir properly to incorporate and allow to cook more for the water to dry
Step 6.
As it thickens more , I will add the chopped tomatoes, onions and hot pepper here above. And incorporate by stirring .
Then cover to keep drying more of its water
Step 7.
Will add the red palm kernel oil here, stirring more to continue thickening .
And finally added the basil πΏ leaves
Step 8.
Cover for few more minutes and its all ready. Looking so appetizing to serve for lunch π₯.
My mother frequently use to cook this vegetable yam dish for lunch π₯ π₯ before she departed, so its always a good memory for me anytime I cook this staple dish for family. And the good thing being that she never forces anyone to eat this meal because it tastes so delicious π€€ on its own.
