an easy way to make Halua (candied red chili from the North Sumatran Malay community)

When I was pregnant with my second child, I had a "craving" to eat candied red chilies. at that time we were visiting the house of one of my husband's college friends, we passed a traditional market in the stabat area, this market is the main market in the stabat area, Langkat district, north Sumatra province, Indonesia.

One type of merchandise sold in the market is pickled and candied fruit typical of Langkat Regency, North Sumatra Province. This region's specialty sweets are called HALUA, which are sweets made from various fresh fruits such as mango, kedondong, ceremai, salak, and even candied red chilies are sold in the Stabat market. The Malay people of North Sumatra make halua with the aim of preserving fruit traditionally when the harvest is in progress, with a very abundant amount of fruit it is feared that the fruit will rot, by making halua the fruit can last for months.

When I saw this candied red chili, I wanted to eat it, this candied red chili was only available in the stabat area, we looked for it in the stabat area and finally found candied red chili which turned out to be sweet and spicy.

So today I will try to make candied red chili, even though it is candied chili, but it turns out it's not too spicy and you can even say it has a sweet taste, maybe because of the influence of the amount of sugar used to make these sweets. But the bow that I made will last only a few days, because the bow that I made I did not dry in the sun.

PREPARATION
The ingredients that I provided at the preparation stage are :

15 red chilies
2 tablespoon salt
250 mL water

The preparation process for making candied red chilies is:

1.choose red chilies that are large/fat with thick flesh and usually contain few seeds.

2.split the red chili to make it easier to remove the seeds, don't throw away the stalk.

3.arrange the seeds that have been removed in a bowl with a lid.

4.put salt in a bowl containing chili.The purpose of adding salt is to reduce the spicy taste. In Indonesia, many use whiting as a substitute for salt.

5.add water to a bowl of chili and salt.

The red chilies must be completely submerged in salt water.

6.cover the bowl and let the red chilies soak for 2-3 hour.

7.after 2-3 hour, wash the red chilies with running water, be careful not to break the red chilies.

It's time to make the candied red chili, the ingredients I use are :

15 red chilies which has been soaked in salt water.
5 tablespoons sugar
I use red chilies and sugar in a 3:1 ratio (3 red chilies and 1 tablespoon sugar)

how to make :
1.put the sugar in the pan, then cook until the sugar melts.

2.after the sugar melts, then add the red chilies, stir until the red chilies are mixed with the liquid sugar,after the chili is mixed well, then turn off the stove.

3.put the candied chili in a bowl, let it cool, then close the bowl and leave it for 24 hours.

4.after 24 hours, this is the condition of the red chili that has been made sweet.

I tried the candied chili and the sweet taste combined with a slightly spicy taste, just exploded in my mouth, I didn't feel I had finished several candied chili stalks in less than a minute. I really like the taste of candied chili which makes me excited to eat it.

Do they burn less if you take the seeds out?

if we don't remove the seeds, then the spicy taste will burn our tongue and when we chew it feels uncomfortable with a lot of red chili seeds @nikv
