an experiment to make steamed banana sponge without eggs

Hello vegan lovers, I have several ripe bananas, they are even too ripe and have a very soft texture. Bananas that are too ripe when boiled the results are not good, because they are too soft. When the bananas are fried, the results are also not good because the bananas will absorb the cooking oil. I decided to experiment with making steamed banana sponge without eggs. This jackfruit banana has a very fragrant aroma but this banana is the type that is usually processed as fried bananas and various other cakes. After ripe bananas are marked with a yellow color, this type of banana has a sweet banana taste, so when it is processed into cakes, I usually only use a little sugar.

FIRST TRY

In the first attempt to make steamed banana cake without eggs, I used several ingredients, namely :
10 ripe bananas
7 tablespoons flour
1/2 teaspoon salt
2 tablespoons sugar
1/2 teaspoon baking soda
1 tablespoon cooking oil to coat the mold so the dough doesn't stick.

the way is :
1.Peel the banana and put it in a bowl for the dough.

2.Add sugar, salt and baking soda to a bowl of bananas.

3.smooth the dough until soft, I use a glass to smooth it.

4.Enter the bread flour into the dough that has been smooth, stir until well blended.

let the dough rest for 5 minutes

5.prepare a pot for steaming

6.prepare a sponge mold, give a little oil so that the dough doesn't stick, pour the dough into the mold, smooth it out.

7.Steam the dough for 40 minutes on medium heat, we can check whether the sponge is cooked or not with a stick or cutlery, if we put the cutlery into the dough and the cutlery has no sticky dough, it means the cake is cooked.

THE RESULT IS A SOFT BANANA SWEET, LOOKING TOO SOFT AND FIBER, SO WHEN I REMOVE IT FROM THE MOLD, THE CAKE IS A LITTLE DESTRUCTION. This is because there are too many bananas.

SECOND TRIAL
In the second experiment, I reduced the number of bananas and increased the amount of flour. The ingredients I use are :
5 ripe bananas
12 tablespoons flour
1/2 teaspoon salt
2 tablespoons sugar
1/2 teaspoon baking soda
1 tablespoon cooking oil to coat the mold so the dough doesn't stick.

While the steps for making steamed banana sponge without eggs are the same as the steps in the first experiment, only the amount of ingredients is different.

RESULT
on the second try the eggless steamed sponge cake looks good, the texture is harder than the first one.

When I tried to cut the cake, it turned out that the texture of the cake was harder with a little banana fiber, this result was much different when compared to the results in the first experiment.

After I ate it, I liked the taste more on the first try, although the shape was not good but the taste of the banana sponge was more pronounced, while the banana sponge on the second experiment had a good texture and shape but the banana taste was less pronounced.

I would recommend that to improve the flavor in the second recipe, you include spices, such as cinamonn, which combines very well with the banana.
