Hello Vegan Lovers, today I bought a pineapples, but because I didn't choose the pineapple myself and asked the seller to help me get them, it turned out I was given pineapples that weren't yet ripe and I was sure from the color of the skin. The taste of pineapple is very sour. I have a principle not to waste food, therefore I will process this sour-tasting pineapple into delicious and fresh food.

I will process this sour pineapple into sweet, spicy and fresh pickled pineapple. Pineapples that are made into pickles and soaked in sugar water will release their water and mix with the sugar water, thus making the sugar water fresh. To enrich the pickled taste, I will add chopped red chilies and vinegar.

The ingredients

The ingredients I use to make pickled pineapple are :

1 young pineapple
200 grams sugar
1 tablespoon salt
1 tablespoon vinegar
3 red chilies
1 liter water

The ratio of water and sugar is 1 liter of water: 200 grams of sugar. I like the taste of pickles that are not too sweet, therefore I use just enough sugar to neutralize the sour taste of pineapple.

How to make

1.Boil water until it boils.

2.After the water boils, add the sugar.

5.Cook the sugar solution until it boils, then turn off the stove.

6.Leave the sugar solution until it cools.

While waiting for the sugar solution to cool, I will process the pineapple. First I will peel the pineapple skin.

Then I threw away the eyes of the pineapple, I had to really remove the eyes of the pineapple, don't leave anything left, because it would affect the taste of the pickle.

Then I washed the pineapple, so that the pineapple sap that caused itching would disappear.

IMG20231226204359.jpg

Cut the pineapple according to your taste, the most important thing is not too thin, so that it doesn't crumble when processed into pickles.

IMG20231226204532.jpg

Arrange the pineapple pieces in a jar or container box with a lid.

Clean the red chilies, then cut them into small pieces.

IMG20231226205331.jpg

Put the red chili pieces into the container box.

Add vinegar.

Next I will check the sugar solution, whether the sugar solution is cold, We have to make sure that the sugar solution is cold, if we use a warm sugar solution, the freshness of the pickled pineapple will be reduced. After the sugar solution is completely cold, then put it in a container box the pineapple pieces.

Close the container box, then store it in the refrigerator to make the pickled pineapple more delicious. Wait for 24 hours so that the sugar solution soaks into the pineapple and the pineapple releases its water. The combination of sugar water and pineapple makes the pickled sauce taste fresh.

The result

Pickled pineapple that has been stored for 24 hours in the refrigerator looks like it has changed color, because the sugar solution has been absorbed into the pineapple pieces.

Pickled pineapple made naturally without added preservatives can last in the refrigerator for a week and the taste will remain well preserved.

In Indonesia, pickled fruit is one of the favorite foods during Eid al-Fitr, not all homes make pickled fruit, because they reason they can't make pickled fruit, even though the method is very easy. Enjoy trying this pickled pineapple recipe.
