This afternoon, one of my neighbors gave me two mangoes, I thought they were ripe and sweet mangoes. But after I noticed, this is a mango that is still young. Seeing the young and fresh mangoes, makes me want to eat fresh young pickled mangoes, because I haven't made pickled young mangoes for a long time.
In recent years, it is very difficult to find a young pickled mango seller, if someone sells pickled young mango, usually the seller will add yellow coloring which is an artificial color, I don't like pickled mango when artificial coloring is given, that's why I will make pickled young mango (while there are young mangoes at the neighbor's gifted house). Young mangoes have a sour taste, so they are suitable for making fresh pickles, so that the sour taste is reduced. When making pickled young mangoes, I usually add a lot of sugar. The right amount of sugar will affect the pickled taste of the mango. I usually use a 1:1:1 ratio, which is 1 kilogram of mangoes: 100 grams of sugar: 1 liter of water. But when the young mango is too sour then I will use 125 grams of sugar.
We can use any type of mango to make pickled young mangoes, the most important thing is that the mangoes used are young mangoes that have a firm texture.
The ingredients that I use to make the pickled young mango are :
2 young mangoes (850 grams)
100 grams of sugar
1 tablespoon of salt
6 red chilies
1 liter of warm water
An easy way to make pickled young mango, namely :
1.Wash the red chilies, remove the stalks and put them in a blender.
2.add sugar to the blender
3.add warm water to the blender, then blend all the ingredients, it doesn't need to be smooth, the most important thing is that the red chilies have been coarsely ground.
4.Let the red chili solution cool down.
5.Peel the young mango, then wash it to remove the sap.
6.Then cut the young mango according to taste, I cut it at random sizes using a knife.
7.Arrange the mango pieces into a jar / bowl that we can close tightly.
8.Add salt to the jar/bowl containing pieces of young mango.
9.Tightly close the jar/bowl containing pieces of young mango.
10.time to shake the jar until the salt is well mixed.
After shaking, the young mango will mix with salt and start to runny like this.
11.Check the red chili solution whether it is cold or not, when it starts to cool / the hot steam is gone, put the red chili solution into a jar containing pieces of young mango.
I also put in the young mango seeds which still have the flesh attached. We often scramble to eat this part.
12.Close the jar tightly and put it in the fridge.
13.After I put it in the fridge for 24 hours, the young mango pieces started to wilt so they started to shrink.
It's time to enjoy the fresh young mango pickles, I love the fresh gravy.
