Hello Vegan Lovers, today I will share a traditional Indonesian snack recipe. Indonesia is a country that is rich in various traditional cuisines, this is because Indonesia consists of many ethnic groups so that it has many traditional cake recipes. each tribe has its own characteristics in the preparation of traditional cakes.
The traditional cake that I will make today is the pumpkin lemet cake. Lemet cake is a traditional cake originating from the island of Java, usually lemet cake is made from cassava, sweet potato or ripe banana. But today I'm going to make a lemet cake from pumpkin.
Lemet cake is a snack that has a sweet and savory taste, because it is made from pumpkin which has a sweet taste, grated coconut which adds a savory taste and palm sugar to give it a sweet taste. The traditional lemet cake is wrapped in banana leaves so that it has a distinctive banana leaf aroma and makes the lemet cake taste more delicious. Lemet cake is usually served at parties and also at family gatherings.
Before making the dough for lemet cake, I will take some banana leaves in the garden, these banana leaves are used to wrap the cake.
Before being used as a wrap for the lemet cake, the banana leaves are dried in the sun so that the banana leaves will wither so that they can be used as wrappers for the lemet cake, but because this morning the sun has not yet appeared, I will heat the banana leaves on the stove, I only heat the banana leaves until wilted.
After baking on the stove fire and I trimmed the top of the leaves, this is what the leaves look like for cake wrappers.
Next I will prepare the pumpkin to be processed into a soft cake. The ingredients I use are 500 grams of pumpkin and 500 mL of water to boil the pumpkin.
Next I will boil the pumpkin, besides being boiled, we can also steam the pumpkin until it is soft. First cut the pumpkin into several pieces, then remove the seeds, I will peel the skin after I boil it until soft.
After the pumpkin is cut, I will boil it until it's soft.
as if the pumpkin was ripe and soft, I turned off the stove and removed the pumpkin.
Now the pumpkin is ready to be processed into lemet cake, the ingredients that I use to make pumpkin lemet cake are:
500 grams of boiled pumpkin
100 grams of rice flour
100 grams of bread flour
grated coconut from 1/2 coconut
1/2 teaspoon of salt
100 grams of palm sugar, if not we can replace it with brown sugar
enough banana leaves to wrap the cake batter
The method
1.Peel the pumpkin skin and puree the pumpkin until it is soft and there are no hard parts of the pumpkin.
2.Add breadcrumbs to the pumpkin mixture.
3.add rice flour to pumpkin mixture.
4.Add grated coconut to the pumpkin mixture, then stir until all the dough is well mixed.
5.Add salt, then stir the mixture until the salt is evenly mixed.
6.Thinly slice the palm sugar/brown sugar, then add it to the pumpkin mixture.
7.Mix all the dough until it is well blended and forms a dough that can be shaped.
8.Pour a tablespoon of the mixture on the banana leaf.
9.Roll the banana leaf until there is no visible dough.
10.Arrange the banana wrap in the steamer, then steam the dough for 40 minutes over medium heat.
11.After 40 minutes, we check whether the pumpkin paste cake is cooked or not.
the outside of the banana leaf looks wilted, I will see the soft cake.
The pumpkin lemet cake is cooked, serve it while warm with a glass of warm tea and make gatherings with family or friends more exciting with the savory and sweet pumpkin lemet.
