We've been cautioned against midnight eating, which is true for several concerns. However, there are those nights you just have to break the rules. Those nights when you stayed long awake and deep into the night, doing something necessary and helpful but the worms in your stomach are warming up for what's not good. Haha. You have to run to something to eat right?
While I was in school, my roommate could stand up and 12 AM and decide to cook a meal like rice and beans (or just rice other times). It's a common thing in school, so it wasn't weird to some extent. The advice goes, we shouldn't eat at midnight for the sake of indigestion, but how can we help it since we're mostly awake at night and might need to eat?
I didn't feature much in eating those heavy late-night meals. For the sake of indigestion most times. But there are fast night meals that can be made. Tea, bread and maybe an egg at times is a great option for me. Like, just get some hot water and a Cadbury sachet in place, or milk and Milo in the traditional way, egg, and some bread available and I have a quick night meal to make.

Even while I was in school, and we would spend time deep into the night working on a design project, one of the run to meal was bread and egg. Since it was inside school we would go to a food vendor and have them do it, followed by a nice chilled soft drink, and you can be sure that work will keep on moving, hopefully. That's if I don't end up sleeping a bit later. Haha.
The best option when at home is tea and bread, even without an egg. I value taking much liquid at night than solid food so the choice of tea and bread seems very appealing to me, and come on, the only thing I will have to do to prepare this meal is to boil water and pour the beverages. And believe me, I know how to boil water very well.
A good tea and good sips, a good bread and good bites, and the night goes off maybe into the morning. But to count another option in a fast meal I could cook would of course be noodles. I'm not much of a big fan though, but it's a handy meal when trying to make something quick at night to quench the desires of the worms in my stomach.

All that's needed to make this meal is less than ten minutes of my time, water boiling in a pot and waiting for the introduction of the noodles into the pot which is ready with its ingredients in place already. The noodles just have to be placed inside the pot in the already boiling water, the ingredients poured inside, stirred and minutes later it's ready for consumption.
Hardly, you find what beats this as an option for a fast meal to cook at midnight. So, it's tea and bread at night for me, or the all helpful noodles. That's it fellow midnight owls. It's 03:23 AM and I have to drop the pen here. Maybe to make tea and bread or some noodles. Let's see.
