Hello amazing people of the Hive! Today marks the 125th Independence Day of my beloved country, the Philippines 🇵🇭! Of course, it is declared Holiday here but we still went to school this morning to attend the flag raising ceremony and a short program right afterwards.

THE FLAG RAISING CEREMONY...

We attended the flag raising ceremony at 8 in the morning. The fun part is that I was not able to read the message of the school principal about the prescribed attire for the event😂. We were to wear a Filipiniana (the Official Filipino National Attire) but I ended up wearing jeans😂.

I thought that only teachers were present in the ceremony but it was good to know we had pupils and students who were also a part of the celebration in school.

After the flag-raising ceremony, we proceeded to the mini- covered court for the short program/ tribute.

When everyone was settled, we started the program with a prayer and the singing of the Nationalistic song performed to us by one of the talented teachers in the field.

There were few speeches along the way, then my time came. OMG,YES! I have had a part in the program but look at the outfit? Needs a lot more effort, right?😂 There were three of us who were tasked to share a short insight/ experience relative to celebrating Independence Day!

We had witnessed a lot of presentations, from singing to interpretative dances and play. Both from teachers, pupils and students. We were offered a heartfelt nationalistic song from a talented Grade 3 pupil.

We also had an interpretative dance from the elementary teachers which I did not expect huh😅 because last week was a lot busier than any other weeks in school so I was surprised that they were able to find time to practice and had prepared something for everyone! (How amazing teachers are?🥰💕)

We also witnessed a re-enactment of the declaration of Philippine Independence by the selected Grade 6 pupils. The high school students had prepared a tribute too.

The presentations were all amazing and inspiring. It's been three years since we last celebrated our Independence Day like this because of the pandemic. This activity reminded me of how our brave ancestors fought and died for the freedom we enjoyed today.

A SWEET TREAT FOR INDEPENDENCE...🥰

After the program, I went home immediately because my kids were waiting for me😅! I wanted to spend my remaining precious time of the day because tomorrow is working day again.

It was lunch time when I arrived and my children were indeed waiting at the doorstep😅!(Not just waiting for me but waiting for what I would bring for them,a treat or anything 😂).

Unfortunately, I was not able to bring something for them. And I saw the disappointment in their faces so I asked them what they want for an afternoon snack. Ice cream! But nope, we already had ice cream yesterday so I decided to make a cold and creamy mango-gelatin for the hot afternoon.

Here's the quick and easy procedure:

  1. Prepare the ingredients.

IMG20230612130103.jpg

1 sachet of Gelatin Powder

1/4 kl. White/refined sugar

IMG20230612133747.jpg Two medium-sized riped mangoes.

IMG20230612133647.jpg Nata de Coco (227 grams)

IMG20230612133732.jpg Two 250mL All Purpose Cream (You can use only one if you like but I used two because I love it to be creamier😅)

IMG20230612133710.jpg Two Cans of Sweetened Condensed Creamer (Any brand will do!) You can opt to use only one can and/or adjust the sweetness you like!

2.Put 6 cups of water to boil. Add 1 cup of white sugar. Once it boiled, pour the gelatin powder while stirring.

3.When it boiled again, take it out of fire and transfer the mixture into a wide container where it can cool down faster or better yet put it in the fridge until it cools and thickens.

4.Sliced the gelatin into smaller pieces.

5.Mixed all the remaining ingredients😂

A little trick in scraping mangoes😂...

6.Taste test and put to fridge to cool for about two hours.

7.Serve cold and enjoy!

The kids love it but I serve them in moderation, still sweetened cold snacks are not advisable. Anyway, just to satisfy the cravings😅 and a celebration for this momentous day. Happy Independence Day, Philippines!💕

That's all for now my friends! I hope you enjoy this narrative. Thank you so much for the love and continued support. God bless everyone!

Big hugs!🥰🤗
