Well you might be right about that (vegetables). But we are talking about sprouting nuts, seeds, beans and grains, which is a different story. There are huge benefits of eating sprouts.
24 hours is good, but depending on what you are soaking maybe good to change the water (especially chick peas i think - probably best just to soak 12 hrs or so, then rinse and drain 2-3 times per day so they start sprouting).
i think for grains it's good to soak for longer, even adding a little vinegar to help them ferment a little before cooking.

Have you tried sprouted raw hummus? Easy to make (if u have a food processor) and so much more nutrition.

How many hours do you soak legumes like beans and chickpeas before cooking?
